It's Pie Time across the Southern Highlands, and is there anything cosier than a proper pie on a frosty Berrima morning?

Here's a little secret worth knowing: a good pie is only as good as what you put beside it. A dollop of Highlands Relish, a smear of Wholegrain Mustard, a spoon of tangy chutney, and a humble pie becomes a feast.

Five ingredients. 35 minutes. Sticky, golden and properly delicious.

METHOD

Heat the oven to 200°C (180°C fan). Line a tray.

Toss the carrots with honey, oil, thyme leaves, salt and pepper until glossy.

Roast for 20 to 25 minutes, shaking the tray halfway, until tender and sticky at the edges.

Tip onto a platter and drizzle with any sticky honey from the tray. Done.

Carol's tip: don't waste the sticky tray. A splash of vinegar through it and you've got an instant dressing for a winter salad.

How do you like to end your day? We are partial to a cup of black tea and a teaspoon of honey straight from the jar. Just a quiet minute before the day starts.

Today it was the Stringybark. Dark, woody, almost caramel. Yesterday was the cold-pressed Macadamia, and the day before that, a small corner of honeycomb on the side of a knife.

This is the bit nobody tells you about working in a pantry. You stop having a single 'favourite' anything. There are always too many good things to taste. The shelf changes, and so does what you reach for.

If you've only ever bought one kind of honey, do yourself a kindness and try a different one this week. It might be the smallest, loveliest thing you do for yourself all day.

There's a particular kind of golden you only get in late autumn. It sits in a jar on our shelf.

Our Winter Blossom Honey is gathered when the bees have been busy on the cool-weather bloomers. Those quiet little flowers that show off when nobody else can be bothered. The result is a honey that's mellow, floral, and gentler than its summer cousins. Carefully sourced from local beekeepers.

A tip: stir a spoonful into your evening tea, drizzle it across a hunk of sharp cheddar, or just have a teaspoon when the world's been a bit much. Won't fix everything. Will fix more than you'd think.

Friday afternoon and the cheese board is calling.

Pay attention. Our Plum and Port Paste is what happens when rich, dark plums spend a slow afternoon simmering with proper port wine. The result is a thick, glossy paste with deep fruit and a grown-up warmth that absolutely sings alongside a soft cheese.

Honey, in its most honest form.

Our wild hand-cut honeycomb is exactly that. Cut straight from the frame, wax and all, with nothing added and nothing taken away. The bees built it, capped it, and we simply popped it in the jar.

Spread a piece on warm sourdough with butter, drop a chunk onto a cheese board next to a sharp cheddar, or stir it through warm porridge and let it slowly melt.
