How about some tasty sausage stuffing to warm up during the winter?

FULL RECIPE ⬇️

INGREDIENTS
8 British Sausage Co. Pork Sausages, remove casing and break into little bite size pieces.
1 onion, diced
1 garlic clove, crushed
1 large carrot, diced
1 stick of celery, diced
½ loaf or four slices of sourdough bread
1 teaspoon sage, chopped
1 tablespoon parsley, chopped
1 tablespoon of butter
1 ½ cups of chicken stock
1 egg
Salt, pepper

METHOD
1. Preheat oven to 180°C.
2. Chop bread into 1-2cm pieces and toast in oven for 15 minutes.
3. Melt the butter in a large fry pan and add the onion, garlic and celery. Stir and cook for until soften.
4. Add the sausage pieces into the pan and cook for 5 minutes until they become golden.
5. Add sage and parsley. Stir and cook for another minute then transfer to bowl with toasted bread.
6. In a separate bowl, whisk egg and chicken stock then pour over bread mixture.
7. Add salt and pepper and toss until bread soaks up liquid.
8. Bake stuffing in 180°C oven with foil on top for 30 minutes.
9. Remove foil and bake for a further 15 minutes.

Winter is officially here, which means it's time for sausages (obviously). Try creating this delicious Sausage & Broccoli Orecchiette at home using our Cumberland Sausages.

FULL RECIPE ⬇️

INGREDIENTS
8 British Sausage Co. Thin Cumberland Sausages (casings removed and broken into bite size pieces)
350g orecchiette pasta
1 small head of broccoli, cut into small florets
1 cup frozen peas
2 gloves garlic, finely chopped
1 tbsp olive oil
½ cup grated Parmesan or Pecorino Cheese
½ tsp chilli flakes (optional, for a little heat)
Zest of 1 lemon (optional, for a little fresh zing)
Salt and pepper for seasoning

METHOD
1. Cook the Pasta: Bring a large pot of salted water to a boil. Add orecchiette and cook until al dente, approximately 8 to 10 mins (see directions on pack). Reserve ½ cup of pasta water before draining.
2. Blanch the Broccoli and Peas: In the last 3 minutes of pasta cooking, add in the broccoli florets and peas to the boiling water. Drain with the pasta and set aside.
3. Brown the Sausage pieces: Heat olive oil in a large frying pan over medium-high heat. Add the sausage pieces and cook until golden and cooked through, about 6–8 minutes.
4. Sauté Garlic & Combine: Add garlic (and chili flakes if using) to the pan and sauté for 1 minute. Return the pasta and veggies to the pan. Toss everything together, adding reserved pasta water and grated cheese to create a light sauce.
5. Finish & Serve Season with salt, pepper, and lemon zest if using. Serve with more grated cheese and chilli flakes…if you like a little heat!

It's nearly that time of year again...colder, darker, cozier...perfect for a classic toad in the hole cookup!

INGREDIENTS
Using The British Sausage Co. Cumberland Sausages or The British Sausage Co. Beef Eater Sausages

Yorkshire Pudding Batter
4 large eggs
1 cup of plain flour
¾ cup full cream milk
¼ cup of water
½ teaspoon salt
2 tablespoons beef dripping or oil of your choice that can handle high heat.

METHOD
1. Make the batter first. Whisk eggs in a bowl then add in the sifted flour and salt. Mix the eggs and flour well then gradually whisk in milk and water to the mixture to create a smooth batter with no lumps. Transfer to the fridge and let rest. You want the batter nice and chilled.
2. While the batter is resting, in a moderate oven, (approximately 160OC) heat 1 tablespoon of the beef dripping in a roasting pan and add the sausages. Cook for 7 to 10 minutes ‘til the sausages are a light golden. You don’t want them fully cooked yet as they will finish cooking in step 4.
3. Remove the sausages from the roasting pan and let sit on a plate. Next, add the remaining 1 tablespoon of beef dripping to the pan and return to a very hot oven (approximately 220OC) for 5 to 10 minutes to get the dripping very hot… this is the secret to the fluffy pudding.
4. Next, very carefully (it will be hot!) remove roasting pan from the oven and add sausages back to the roasting pan, allowing space around each. Finish by carefully pouring the batter around the sausages and the bake in the very hot oven for 20 minutes or until puffed and golden.
5. Serve with your favourite veg and onion gravy.

INGREDIENTS
British Premium Leg Ham of your choice
Bread of your choice
Cheese of your choice
Mustard
Mayonnaise
Butter

METHOD
Spread mayo on one slice of bread and mustard on the other.
Add the ham, top with cheese and close sandwich.
Butter the top of the sandwich and place top-down in a frying pan. Then butter the remaining side, ensuring you get every corner.
Cook for 3 minutes then flip. Cook further until cheese is melted through.

When was the last time you had sausages and mash? Revisit the cold weather classic this weekend with our Cumberland Sausages 🤤

FULL RECIPE ⬇️

Ingredients
British Sausage Co. Angus Beef and Caramelised Onion Sausages or British Sausage Co. Cumberland Sausages
Vegetable oil
2 large brown onions, thinly sliced
1 tablespoon thyme leaves, chopped
2 bay leaves
1 ½ tablespoons plain flour
150ml red wine
250ml (1 cup) beef stock
1 ½ teaspoons Dijon mustard
1 tablespoon sugar
Splash of red wine vinegar (optional)

Mash
1kg red or blue potatoes, peeled and chopped
40g butter, melted
1/2 cup milk, warmed
Extra melted butter, to serve

METHOD
Preheat oven to 140°C.
Pan fry or oven bake the sausages as per our suggested cooking tips on the back of pack.
Place onions in the pan and cook over medium-low heat, stirring occasionally, for 10 minutes or until very soft and golden brown.
Meanwhile, start mash. Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Boil for 15 minutes or until potato is soft. Drain.
To make the gravy, add herbs and flour to onion and cook until flour starts to turn light golden. Add wine and simmer for a few minutes, then add stock, mustard, sugar and vinegar. Cook for 1-2 minutes. Return sausages to pan, increase heat to medium and cook in gravy for 5 minutes.
To finish the mash, add butter and milk to potatoes and mash with a potato masher until fluffy. Season to taste with salt and pepper.
Divide potato between plates, add sausages and serve with onion gravy.
