Why an old oyster hatchery made for the ultimate distillery.

1. OCEANSIDE LOCATION
The undeniable influence of the ocean on our whisky, as our barrels breathe in and out the ocean air for years as they mature.

2. REPURPOSED INFRASTRUCTURE
We were able to repurpose existing salt water pipes to use in our ocean-cooling system, sending the ocean water to a heat exchange, cooling the water coming off the stills whilst distilling.

3. GREAT BONES
From the moment we first stepped inside the building, we could see the vision coming to life. Many different rooms, all able to be converted into our Still Room, Brew House, Rob’s lab and Bond Stores.

4. ROOM TO MAKE IT OUR OWN
We spent many, many months painting, scraping, installing and cleaning, slowly transforming the old oyster hatchery into a world class whisky production facility.

5. A VISION WE COULDN’T UNSEE
Our vision was to create a maritime single malt whisky, the Tasmanian way. The whisky we’d always wanted in our own whisky shelves. For us, there was no better place.

It’s been a journey, that’s for sure. And now, we (collectively) get to enjoy the fruits of our labour.

NOW AVAILABLE - Founder’s Reserve single malt whisky, 62% ABV, batch 12.

This is our only cask strength whisky at a bold 62%, matured entirely in rich ex-Tawny Port casks.

These beautiful casks were set to rest right on the edge of the ocean at the distillery, breathing in and out the salt air day after day.

Only 646 bottles in the entire release.

Head Distiller Rob Polmear on what’s unique to this batch:

“Each new batch will have slight differences due to the change in barrels over time. This Founder’s Reserve batch 12 is slightly more berry forward than previous, but still balanced with the sugars from oak. The finish is still oily, buttery and fruity as you would expect from a Founder’s Reserve.”

A big, juicy single malt with notes of sultana, orange and sticky date pudding with our uniquely maritime characteristic.

All of our whiskies are released in small batches, as they come to full maturation. Only 646 bottles in this entire release, no doubt this won’t be around for long.

What is it? Co-founder Bec shares why it’s her favourite and how you can get yourself a bottle.

“Owning & running a distillery day to day, we’re regularly drinking whisky, regularly doing samples but when I’m drinking whisky just for pure enjoyment, I want something that packs a flavour punch and that lingers on. Something I only have one or two glasses of.

“I love fortified matured whisky so for me, it’s our cask strength ex-Tawny Port matured whisky, our Founder’s Reserve.

“Unlike a lot of cask strength whiskies, you’re getting so much flavour up front and then you’re getting that that hit of alcohol at the back, rather than the other way around. Like dessert in a glass.” - Bec

Our team are literally right now putting the final labels on our new batch of Founder’s Reserve whisky, launching at 7pm tomorrow (Wednesday the 10th) on our website.

This is our biggest, boldest and only cask strength whisky, matured in our highest quality ex-Tawny Port casks, as rated by Head Distiller Rob, bottled at 62% ABV.

Notes of sultana, orange and sticky date pudding on the palate with a hint of chocolate and waffle cone and a long, gooey salted caramel finish.

COMING WED 7PM - Our new Limited Release Port Royal whisky is coming tomorrow (Wed 13th) at 7pm AEST!

This is the Waubs Harbour take on a maritime cigar malt whisky - a traditionally fortified-driven whisky, bold & robust and pairs beautifully with a cigar.

Port Royal is certainly that.

Matured in ex-Apera Sherry casks, finished in rare 70 yr old Tawny Port casks.

Rob’s tasting beautiful sweet fruits, butter & cream from the Apera casks and big, rich sultana, musk & nutmeg from the very old Tawny Port casks, with an underlying maritime character from its oceanside maturation that’s uniquely Waubs Harbour.

Hand-bottled, hand-labelled & hand-written one at a time, right here at the distillery.

A big, decadent maritime whisky with a long, lingering finish.

“The most flavour packed whiskey I’ve tasted. Strong coffee, cigar, malt flavours that linger on the tongue. Maritime whiskey that packs a punch. The most memorable Tassie whiskey I’ve tasted - Elizaveta Pogossov, guest at Sydney launch event.

The unveiling of our custom cigar humidor!

You may have seen over the past few weeks, Laurie Schmeider, who coopers our barrels on-site at Waubs Harbour, has been quietly hard at work, creating a custom made cigar humidor to preserve the freshness & flavour of our ci**rs here at the distillery.

Today marked the final unveiling of the humidor and wow.. What a work of art it is!

“The main part of the box is made out of rare Brazilian Mahogany, laminated with French Oak staves and it’s been grain matched around the box..” - Laurie

Each piece of wood was run through the Thicknesser, before letting the wood settle before beginning to assemble the humidor.

“(For the lid) we’ve decided to go for a thinner, even rail all around the outside with a recessed glass panel.” - Laurie

Inside, sits the hydrometer and humidity chamber to maintain optimum conditions for our ci**rs, with Brazilian Mahogany inserts for the ci**rs and accessories.

“Outstanding mate. You can never capture this as well on film as it is in person. Even better than we expected, planned or dreamed.” - Co-Founder Tim

A huge thank you to .schmeider_ for his care, precision and many, many hours that have gone into making something truly special. This will certainly take pride of place at the distillery.

And just in time for the launch of our maritime take on a cigar malt whisky… Limited Release Port Royal coming Wednesday! Our incredible email community will receive priority access to this special release at 7pm AEST for one hour or until sold out.
