It’s all hands on deck getting our Waubs Original + Port Storm whiskies ready for release tomorrow (Wednesday) at 7pm AEST!

“It’s been interesting this week. Earlier in the week it was wet and when it’s been raining a fair bit, the humidity is really high. It affects everything we do in the distillery, down to bottling. The key thing is sticking on all the label sets and sometimes in the humidity, it just doesn’t work and you’ve got to come back the next day..

“Really it’s about how it feels - you can feel it in the air, you can see it in the Bond Stores and you can feel that moisture on the glassware sometimes. It just shows how much the atmosphere - the pressure, the temperature and the humidity changes even in the bottling line.” - Head Distiller Rob.

Brand new batches of our Waubs Original whisky + Port Storm whisky are coming this Wednesday (9th) at 7pm AEST!

Each new batch is made to be similar in style however every cask brings its own unique characteristics which influence the final flavour of the whisky.

Let us say, these new releases may just be our best yet. We can't wait for you to taste.

WAUBS ORIGINAL - Batch 13:

This is the go-to whisky on your whisky shelf. Approachable and easy drinking yet complex & full of character.

Big toffee sweetness and deep raisin finish, cut through by a subtle salty character, bringing beautiful balance to this maritime single malt whisky.

Batch 13 is even more elegant, with more toffee than caramel notes.

Matured in predominantly ex-Bourbon American Oak casks, married with a touch of ex-Tawny Port cask matured whisky.

Bottled at 43% ABV. Only 699 bottles in the entire release.

PORT STORM - Batch 13:

Bold & decadent yet delicately balanced. A touch more fruit-forward than batch 12, with notes of rich sultana, heaps of treacle, golden syrup & dried stone fruit. Yum.

A unique complexity coming from the play between predominantly ex-Tawny Port French Oak casks, balanced with just a small amount of ex-Bourbon American Oak casks.

This is something a little bit special yet easy drinking for the everyday occasion.

Matured right here at Waubs Harbour, just metres from the ocean and covered in salty air.

Bottled at 48% ABV. Only 687 bottles in the entire release.

How we use the ocean in our distillery cooling system.

It’s a genius yet simple system using the ocean’s energy by repurposing salt water pipes from our building’s former life as an oyster hatchery.

These pipes were originally used to draw seawater into large fibreglass tanks, home to juvenile oyster spat.

Today, they draw cold ocean water up to our titanium heat exchanger, meeting warm water off our distilling equipment, using the energy from the cold ocean to cool the warm water, before being cycled back into the building to be used once again.

An energy efficient and environmentally friendly cooling system, replacing the need for large energy-sucking chiller machines and one that’s uniquely Waubs Harbour.

After a huge few weeks with of the launch of our Salt Marsh Edition 2 whisky & an incredible Tasmanian Whisky Week, our team has been settling back into a ‘quiet’ week here at Waubs Harbour.

A ‘quiet’ week at Waubs Harbour looks a little something like…

Distillery tours & Guided Whisky Tastings, hosted by Xanthe, Daisy & Joseph, sharing our story & our whisky with whisky lovers from all over the world. Bookings are essential via our website.

Each week, Rob is mashing, fermenting & distilling our mouth-coating maritime spirit, from start to finish here at the distillery. A non-negotiable for us when we first set out to create our maritime Tasmanian whisky, with all of our equipment designed & custom made to do so.

Rejuvenating casks in our on-site Cooperage with Laurie. Rob’s often in the Cooperage, chatting with Laurie, seeing & smelling the casks as they’re being shaved, toasted & charred to his specifications.

Hand-bottling, hand-labelling & hand-writing every bottle right here at the distillery by our small team. If you own a bottle of Waubs Harbour, you will know the meticulous care & precision that’s gone into each and every bottle.

Pouring our whisky at some of the best whisky venues all around the country (and beyond!). Ben is often on the road sharing our whisky with our favourite venues, catching up with the passionate people who run them and hosting whisky tastings.

We’re constantly filling, monitoring, moving & maturing barrels on the edge of the ocean. It’s certainly no small job and often ends in a game of barrel Tetris as we attempt to find more space in our ever-growing bond stores.

And the daily ideas, decisions & vision it takes to make a whisky that truly means something. We set out to create the truly maritime Tasmanian whisky that we’d always wanted on our own whisky shelves and live our dream life by the ocean here in Bicheno. The fact that’s resonated with so many of you just makes it all the better.

COMING WEDNESDAY! Our brand new Salt Marsh Edition Two Limited Release whisky launching tomorrow (Wednesday 12th August) at 7pm AEST!

This has got to be one of our most highly requested Limited Releases! After we released edition one of Salt Marsh last year, we have been inundated with requests for a second edition.

And from the early reviews we’re hearing (swipe to read), some of our biggest supporters have not been disappointed.

This is no ashtray, it’s unlike any peated whisky you’ve ever had - it’s light & nutty with notes of dried pear & brown sugar with a sweet, salty smoke.

Made by lightly smoking Tasmanian barley on-site with local, coastal salt marsh peat and matured in beautiful ex-Apera Sherry casks on the edge of the ocean here at Waubs Harbour.

A huge Tasmanian Whisky Week!!

A true celebration of our state’s incredible Tasmanian whisky industry with events all around the state, bringing together the people who make it what it is.

LAST SATURDAY - Launch event at Lark Distillery, Pontville:

A week of celebrations kicked off on Saturday at LARK Distilling Co..

On stage are this year’s World Whiskies Awards winners, with the majority of the Australian category awarded to Tasmanian distilleries. We’re proud to be standing up there amongst such great company.

MONDAY - The Architecture of Aroma at Sullivans Cove Distillery, Hobart

An intimate seated tasting that reframed Tasmanian Whisky through the language of perfumery, in collaboration with Tasmanian perfumer the raconteur at Sullivans Cove Distillery.

TUESDAY - Salt Marsh Ed. 2 Celebrations at Waubs Harbour, Bicheno

Our team lunch at the distillery was a little something special… Freshly caught fish, from just outside the distillery, brined & then smoked with our local, coastal peat in the Smokehouse at the distillery.

Meanwhile in the courtyard, Rob was smoking spent-barley-fed pork and pork ribs, smoked with barrel shavings, from our farmer Will who collects our grain each week.

And, of course, we shared a dram of our new Salt Marsh Edition 2 whisky.. Coming Wednesday the 12th of August!

WEDNESDAY - Boilermaker North at Saint John’s, Launceston

The countdown is on… Limited Release ‘Salt Marsh Edition Two’ whisky coming Wed 12th Aug!

The first edition of Salt Marsh, released last year, sold out online in a flash and we do not expect edition two to be around for long either!
