🍊 IT’S ALL ABOUT THE PEEL! 🍊

Want to make award-worthy marmalade? The secret is in the peel! 🫙✨

One of the most important tips for great marmalade is to cook your peel BEFORE you add the sugar to the pot.

Why? Once you add the sugar, the peel will never cook to that lovely, tender “bite” consistency we’re looking for.

👩‍🍳 OUR TOP TIP:
Before adding the sugar, take a piece of peel and test it by trying to cut it with your fingernail. And, of course… taste it!

👉 Too hard? Cook it a little longer.
👉 Tender with a lovely bite? Then it’s time to add the sugar! 🍊

🍊 WHAT DO OUR JUDGES LOOK FOR? 🍊

Our Australian Marmalade Awards Committee President, Belinda Stewart, absolutely loves seeing all the delightful entries that arrive to be judged! 🫙✨

Belinda is a seasoned preserve maker and chef, and she’s constantly delighted by the incredible variety, creativity and amazing flavours of marmalade that come through the doors.

👩‍🍳 BELINDA’S TOP TIPS:

Our judges look for four key things:

✨ Clarity – Is your marmalade beautifully clear and bright?
🍊 Peel – Has the peel been cooked well? A great tip is to press the peel between your fingers to test its readiness – then add the sugar!
👃 Aroma – Does it have that gorgeous citrus fragrance?
👅 Taste – Most importantly… how does it taste?

Entering the Dalemain Australian Marmalade Awards is a fantastic opportunity to have your marmalade judged by experienced experts and receive valuable feedback to help you improve your marmalade making.
