Sometimes it's very useful to go and try some whiskys, if for no other reason than to benchmark your own. Tonight we went to a tasting of various Springbank whiskys from Campbeltown at Spier & Wright Whisky Merchants which is a great little whisky bar on King William Road. Great people there and very validating of what we're producing.

We're immensely proud to announce the release of our second batch of Barrel-Aged Gin, this one featuring our Casablanca Gin aged 18 months in a single ex-Oloroso ex-Whisky barrel.

Only 40 bottles are available of this sipping Gin which has been 2 years in the making. The aromas and flavours on this are unlike anything you've ever experienced before so if you like your drinks rich and indulgent, get in quick on this limited release.

This Gin is 100% hand made, from scratch, at our premises in Blackwood, starting with our own alcohol base made from wheat and barley on site, with all distillation, maturation and packaging also done at our premises.

So, this isn't a new super dark and chocolatey sour beer were about to release, although it's wildly delicious. It's actually our next whisky wash ready to go through the still, featuring a tonne of dark chocolate malt, roasted malt, and more than a month in the fermenter which has allowed a secondary fermentation with some wild organisms from the grain creating insane complexity.

πŸ‹ Thanks to all those people who have offered us lemons for our limoncello but we now have enough. A big thanks to those people who let us collect or pick their lemons, Georgie, James & Jane, Bel, and Josh. We'll bring you a bottle of our Limoncello made from your lemons once it's ready.

Part way through our second day straight of zesting and juicing the lemons we were delightfully distracted by a beautiful female koala and her joey wandering down the side of our house. The joys of living in the hills!

πŸ‹ It's that time of year where we're once again reaching out to those locals and nearby supporters who have lemon trees (either Eureka or Meyer, preferably) that are bulging at the seams but can't all be used.

πŸ‹ Every year we rely on these backyard harvests to make our award winning Limoncello, and in return we'll give you a bottle of our Limoncello (made with your lemons!) once it's ready in Spring.

πŸ‹ We're happy to come to your place and pick them directly from the tree. We're after a couple of hundred across 2 or 3 trees, ripe or unripe or a mix. If you're happy to trade your unused lemons for some Limoncello, please reach out to us on here or via email at [email protected].

It was a great day at Kick Back Brewing today, helping judge the Smokin Brews competition in collaboration with the South Australian Brewing Club as part of Kick Back's 5th birthday celebration. Even better that my good mate, Darren Williams won the comp and will have his wonderful Baltic Porter brewed by the guys at Kick Back, going on tap later in the year.

Being such a small distillery, and making all our own product, we can readily experiment with our whisky. Every batch we make is unique, using different grain bills, different yeast or different casks. Today we've made a big bold wash using some dark chocolate malt. And it's tasting beautiful!

On our way back from picking up a couple of beautiful whisky casks made from 65 year old American oak ex Port barrels, we popped into Barossa Distilling Co. for a quick, impromptu tasting swap. It was very validating that our Second Release Single Malt Whisky stood up well against their Gallus Single Malt. Thanks to Emily, Zak and the BDCo team for looking after us. Their Barrel aged Gin and Shiraz Gin are also really, really good.
