We are extremely proud to call the idyllic seaside town of Bowen in North Queensland our home. It is this location that sets us apart from other farms. Situated in the northern Whitsunday region overlooking beautiful tropical islands and coral reef, we have a constant supply of clean, oceanic sea water. We have an intake pumping station located on sandy beach rather than tidal estuary. And we are

part of the dry tropics, Queensland's driest coastal region. Beach pumping in this location ensures salt water is available all year with no effect from the tropical rainfall. We have consistently high quality, exceptionally clean salt water that results in consistently great tasting, healthy fish naturally - with a beautiful, sweet, saltwater flavour comparable to wild caught barramundi. And so they should be - they are grown in oceanic water flowing through our concrete raceways constantly. Coral Coast Barramundi is a fully integrated farm with our own breeding stock hatchery and nursery rearing facility, growout raceways and HACCP approved processing facility. Self-sufficient with control over every stage of production to ensure the best quality and best tasting product possible.

What a fantastic time at Seafood Show this week. We’re so grateful to have been part of this industry event and to have had Farm Manager Justin and Sales Manager Russell there meeting chefs, restaurant owners and hospitality professionals from across the industry.

It was a pleasure to share our premium saltwater barramundi, watch guests enjoy the chef-prepared tastings, and meet so many passionate people from the culinary industry. A big thank you to everyone who stopped by our stall, we loved sharing our farm story and fish with you. We can’t wait to see where Coral Coast Saltwater Barramundi appears on menus next! 🌊🐟🍽️

This week, our baby barramundi graduated from the nursery to grow out raceways.

Each little fish was carefully hand-scooped by Sherith from the nursery tanks and gently transferred, making sure the move was as calm and stress-free as possible. At this stage, every detail matters — from water quality and temperature to handling them with care — because healthy fish start with careful husbandry.

It’s a hands-on job, but that’s exactly how we like it. Raising barramundi means paying attention at every step, and this next stage gives them more space to grow, thrive, and keep developing into strong, healthy fish.

Last minute Easter recipe inspo 🐟🍅🌿

Baked Barramundi with Heirloom Tomatoes

Ingredients (Serves 4):
2 Coral Coast Barramundi fillets, cut into portions
250g heirloom cherry tomatoes, halved
1/2 small fennel bulb, very thinly sliced (reserve some fennel fronds)
1 cup green olives, halved
1 shallot, thinly sliced
2 tbsp drained capers
3 tbsp extra-virgin olive oil
1/4 cup dry white wine
Zest and juice of 1 lemon
3 tbsp butter
Salt & pepper
Fresh thyme
Baking paper or foil sheets

Method: Preheat your oven to 220°C. In a large bowl, combine cherry tomatoes, fennel slices, olives, shallot, capers, lemon zest, and lemon juice. Drizzle with olive oil and season with salt and pepper. Toss to combine.

Coral Coast Barramundi: Lay out baking paper or foil sheets (16 inch pieces). Place one barramundi portion in the centre of each sheet, season with salt, pepper and sprinkle chopped fresh thyme. Spoon the tomato and fennel mixture over the fish. Drizzle with a little white wine and top with a small k**b of butter. Fold the paper or foil to create sealed parcels, ensuring the edges are tightly folded to trap the steam and flavours inside.

Bake: Place the parcels on a baking tray and bake for 14 minutes, or until the fish is cooked through and flakes easily with a fork. Carefully open the parcels, being cautious of steam.

Serve: Plate the barramundi and vegetables, spooning the juices over the top. Garnish with fresh fennel fronds and a few more sprigs of thyme. 🐟🌿
