We’re thrilled to have once again been named a 5-Star Winery in the Halliday Wine Companion 2027. 🥂We’re incredibly proud of this recognition and grateful to our team, supporters and wine lovers who continue to be part of our journey.

We’re also extremely proud of our sparkling wines, which have received outstanding recognition - a true testament to our team’s dedication to producing top-tier, traditional-method sparkling wines. 🥂✨

NV Lumiere Blanc de Blancs
Made entirely from selected Chardonnay parcels from within our Bowral vineyards in the Southern Highlands and is only made in small quantities when the fruit quality is exceptional. The final blend is then given the méthode traditionelle of bottle fermentation and ageing on yeast lees for an extended period. The nose has complex aromas of lemon and vanilla custard, dried yellow apple, and almond biscuit. The complex and stylish palate has nice ripeness and richness of flavour, creaminess, and lovely juicy pink grapefruit acidity, finishing long and dry.

NV Grande Reserve Blanc de Noirs
Made largely from selected Pinot Noir parcels from within our Bowral vineyards, the nose shows complex baked apple aromas, almond and dried apple/apricot biscotti, dried fig, roasted hazlenuts, underpinned by hints of spice and aged honey. The palate is full and textural, with beautiful acidity. Flavours of red apple compote, nougat and preserved orange lead to a beautiful dry finish with lingering notes of almond pastry and dried fruits. Drinking beautifully now, this is ideal for thoughtful sipping or pairing with richer fare such as duck rillettes, mushroom tartlets or aged cheese.

NV Classic Brut
Traditional method of bottle fermentation and ageing on yeast lees for 21 months. The bright and elegant nose reveals fresh red apple, nectarine, almond custard, and subtle creamy lees notes. The cooler vintage has created a detailed and flavoursome style with ripe acidity, red apple, pear and nectarine palate flavours finishing clean and dry. Superb as an aperitif, yet just as enjoyable when paired throughout a meal.

We are one of only two growers in Australia of these classic and unique varietals - Rondinella & Corvina and are traditionally grown in the Veneto region in northeastern Italy, where they are predominantly used to produce the classic Amarone and Valpolicella wine styles 🇮🇹

The classic Ripasso della Valpolicella wine styles are the inspiration for this unique and delicious wine whereby the inclusion of partially dried grapes to the ferment has concentrated the must, adding liqueur cherry, earth, fruitcake, ripe brown spices and a textural, velvety palate. Delicious, juicy, earthy cherry flavours feature throughout the palate whilst ripe, silky tannins assure partnership with food. 🍷

Our newly released 2024 Rondinella Corvina is available for tasting at the Cellar Door and available online.
