A simple guide to how long various beef cuts last in fridge and freezer for optimal flavour, moisture and texture.

When ordering quarters, customers have the option of selecting standard packaging at no additional cost or cryovac packaging at $80/quarter.

Eighth packs are automatically cryovac'd at no additional cost.

Cryovac packaging is recommended for customers who will not be consuming their beef within a couple of months. Cryovac packaging: 1. extends the shelf life, 2. is more compact, therefore easier to store in freezer and, 3. minimizes freezer burn.

We’re making some adjustments to our delivery runs to help streamline the process.

We will continue with fortnightly deliveries within the Toowoomba and Lockyer Regions.

However, we have split the Coast and Brisbane delivery area in two: 1. Sunshine Coast & North Brisbane and 2. Gold Coast & Brisbane. There will be monthly deliveries to these two areas.

Red Beef Curry 🥘

Slow-cooked diced chuck, simmered in Ceres Organics Red Thai Curry Paste. Served over black rice, it makes for a hearty and nourishing meal.

Black rice is naturally rich in antioxidants and also contains more fibre, protein, vitamins, and minerals than many traditional rice varieties.

Cows and calves being fed hay as pastures have dried up and we’re entering the winter when the grass doesn’t grow.

In addition to being fed hay three times a week, they also have access to mineral licks. These provide the cattle with vitamins and minerals as well as energy (molasses) to help them break down the drier feed.

Our grass-group had its quarterly meeting last Wednesday. We’re all grappling with similar issues and it’s helpful to share and workshop our different approaches. The meeting focused on executing plans to ensure we have sufficient feed for our cattle over the coming winter months.

We are preparing for the winter season without a large body of feed, given the lack of rain during the growing season. Some in the group are starting to send cattle away on agistment. All of us are supplementary feeding our cattle (mineral licks, silage, hay); and, at Dandarriga, we are reducing our numbers, as well as weaning calves earlier than we normally would.
