Perfect for dinner parties, last-minute guests, or just treating yourself 🫶
See below for everything you need 👇

What you’ll need:
• The Mindful Bakery Speculoos biscuits
• 250ml thickened cream
• 250g mascarpone (or use all cream for a lighter version)
• 1–2 tbsp maple syrup or honey
• 1 tsp vanilla extract
• Espresso or strong coffee (optional)
• Caramel sauce (optional)
• Fresh berries or sliced banana (optional)

How to assemble:
1 Lightly crush the biscuits (keep some texture).
2 Pour over some coffee if using, or leave as is.
3 Whisk cream, mascarpone, vanilla, and maple syrup until slightly thickened.
4 Layer: biscuits → cream → biscuits again.
5 Top with caramel, fruit, or crushed biscuits.
6 Serve in glasses, jars, or teacups.

NYC Style Speculoos & White Choc Cookies - Biscuit-on-biscuit has never tasted so good!🍪✨

Think: thick, gooey center, crisp edges, creamy white chocolate & molten Speculoos… topped with Little Bakes crumbs because we don’t do half measures here 😋

Save this for your next bake👇

🛒 Ingredients (makes 6 big NYC cookies)
• 230g cold butter, cubed
• 180g light brown sugar
• 120g white sugar
• 2 large eggs (cold)
• 2 tsp vanilla
• 430g plain flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 200g white chocolate chunks
• 4–6 tbsp Speculoos spread (frozen dollops)
• 3 tbsp Little Bakes biscuit crumbs (+ extra to top)

🍪 Method
1. Scoop 1 tbsp spoonfuls of Speculoos onto a lined tray & freeze 30 mins.
2. In a mixer, cream cold butter & sugars until fluffy (2–3 mins).
3. Beat in eggs + vanilla.
4. Fold in flour, baking powder, soda & salt.
5. Mix in white choc + biscuit crumbs.
6. Scoop large balls of dough, flatten slightly, insert frozen Speculoos in center & wrap dough around it.
7. Freeze dough balls at least 1 hour.
8. Bake at 180°C (350°F) for 12–15 mins until edges set + middle still soft.
9. While warm, sprinkle extra Little Bakes crumbs + a drizzle of melted Speculoos.

✨ Tip: Don’t over-bake - they finish cooking as they cool!
