When you look at a cauliflower, “steak” might not be the first thing that comes to mind.

But maybe it should be.

This week in Cooks Collective, Chef Ian is taking humble seasonal cauliflower and turning it into golden Cauliflower Steaks with Satay Sauce — simple, tasty, and so much easier than you might think.

Cut it thick, keep the stem intact, season it well, add your flavour, then cook until tender with a lovely golden crust.

We used Saucy W***h Satay Sauce for a rich, Asian-style finish, but that is the beauty of cauliflower — it is so versatile.

You could go spicy.
You could go cheesy.
You could go curry.
You could go miso.
You could keep it simple with olive oil, salt, pepper and lemon.

One vegetable, so many possibilities.

This is exactly what seasonal cooking is all about — taking what is fresh, affordable and in season, then giving it a little kitchen confidence.

Cauliflower might be humble, but it certainly does not have to be boring.
