HUGE results from the world stage of cheesemaking. 🧀

The 36th Biannual World Championship Cheese Contest took place in Wisconsin, USA from 3–5 March 2026, where 56 international experts evaluated more than 3,300 cheeses, butters, yoghurts and dairy products from 25 countries across 150 categories.

This competition is a highly technical competition and a “big deal” in the world of cheesemaking.

Among the standouts were four producers whom we are incredibly proud to represent here in Australia.

Chawanmushi — a delicate Japanese savoury egg custard, gently steamed until perfectly silky. Traditionally served warm in a cup, its subtle umami from dashi creates a refined foundation for layered flavour.

At Brisbane degustation hotspot , this humble dish becomes something extraordinary. One iteration (Photo) features butter-poached spanner crab, corn custard, roasted quinoa and Yarra Valley triple-smoked caviar.

Owner and head chef Sarah Baldwin continually evolves the ingredients in her Chawanmushi to reflect seasonality, while respecting the traditional technique behind the dish.

At its foundation sits Suehiro Smoked Shoyu. Brewed in Tatsuno, Japan since 1879, Suehiro continues to produce using time-honoured, small-batch methods before gently smoking the shoyu over cherry wood. The result is a Shoyu with remarkable depth, bringing subtle smoke and layered umami to this refined dish.

It’s a beautiful example of traditional craftsmanship meeting modern creativity and respect for ingredients.

No surprise then that ’s Chawanmushi remains a cornerstone of their ever-changing menu — and has been named in the Top 100 Dishes to try for 2026 by .

🇯🇵 Happy Hon Mirin Day 2025 🇯🇵

To celebrate this year, we caught up with Richard Purdue, Executive Chef of 's Margaret Family.

, Sydney, Mirin isn’t just a seasoning — it’s a defining note. When we asked Richard how Mikawa Mirin shows up in their kitchen, the answer was beautifully classic.

“We use Mikawa Mirin in a dressing for sashimi — brown rice vinegar, dashi shoyu and golden sesame oil — poured tableside over fresh albacore tuna with avocado, pickled daikon, sesame seeds and toasted nori.”

A dish built on balance, lifted by the quiet power of exceptional ingredients. There is a good reason this dish has been on the menu for so long.
