Something different this week at Ashgrove, Mick’s going for the duck legs!!!

Duck legs in a blood orange glaze, pomegranate molasses and a little bit of lime zest in there just to give it that little kick of freshness.

Mick says to throw them in the oven (I’d say gently place in the oven) a little bit lower, about 160C for around 45 mins and then turn up the heat at the end - for the perfect quackle 🤣

We’re excited to launch a special collaboration between Meat at Billy’s and renowned chef Martin Boetz of Short Grain.

Martin is best known for pioneering modern Thai cuisine in Australia through his iconic restaurant Longrain and now through his Brisbane restaurant, Short Grain. Martin approached Billy to help create a unique pork sausage for use in his restaurant, combining Martin’s expertise in bold Thai flavours with Billy’s sausage-making experience.

This vibrant Thai Red Curry Pork Sausage sausage will be served on the menu at Short Grain and, for a limited time, will also be available for retail sale through all three Meat at Billy’s stores.

Serving Suggestions
Best grilled.
Brush with coconut oil while cooking.
Serve with Short Grain Sweet Chilli Sauce.

Last week I joined Martin Boetz at to start work on Trial 1 of a Thai red curry pork sausage. Using Martin’s experience and expertise with incredible fresh Thai flavours, I put my sausage-making skills to work.

It’s always great to step outside the butcher shop and into a restaurant setting. It was a breath of fresh air and a real motivation boost to work alongside someone as knowledgeable as Martin, and to work outside my usual comfort zone.

These sausages will be featured on the menu at Short Grain in the coming weeks, but I thought I’d also ask our followers: would you like us to work towards making them available in store at Meat at Billy’s so you can cook them yourself at home?
