MEAT AT BILLY’S FIRST OPENED ITS DOORS IN ASHGROVE IN 2009. IT WAS A YOUNG BILLY’S FIRST EVER STORE AND HE WANTED TO CHANGE THE WAY PEOPLE SAW BUTCHER SHOPS. Quality and impressive customer se

rvice would be paramount. He knew consistency would be another equally important element. His idea soon grew into a successful and busy butcher shop fast becoming an integral part of the neighbourhood. The rest of Brisbane started taking notice and soon enough he had customers travelling from all over to get their meat fix! Much has changed since those early days but Meat at Billy’s focus remains unchanged. Quality, Customer Service & Consistency with a little fun sprinkled on top. Ashgrove is busy store that’s always buzzing. Locals love it and people travel from all over to come and get their fix. Exciting renovations in October 2020 transformed the old (and much loved) shop into something much more modern and fun to take us into the new decade. ONLINE est. 2014
At the time many thought the idea of an online butcher shop was crazy. No one else was doing it. Billy’s instinct was bang on though and his vision for replicating the Meat at Billy’s store experience via our home delivery and click & collect services has certainly paid off. ROSALIE est. 2015
Billy wasn’t looking to open a second store but when this site in Paddington (or Rosalie as the locals know it) became available he knew it was going to be a great fit. He was right. Ashgrove’s little sister store fast became an integral part of Rosalie winning over the villagers with its big personality and huge selection of quality products. WINDSOR Warehouse + Click & Collect
Our warehouse or HQ as we sometimes refer to it is the hub for Meat at Billy’s, the company. It houses our Online Production team and our Marketing & Administration team. It's also the venue for our BBQ classes & other events. AND WHAT ELSE…
Across all of our locations, we’ve teamed with great local producers to offer a range of beef, poultry, lamb and pork. Our hugely popular “ready to cook” products are increasing each month as we come up with new great recipes for our customers to try. You definitely know what time of the year it is when the smell of cinnamon and spiced bread comes wafting from bakeries each morning.

The scent of hot cross buns just has that special way of evoking a warm comforting feeling that we love around Easter. As a twist on the traditional recipe, Alana has included a good dash of whisky to soak the dried fruit in. The whisky enhances the the flavour of the fruit and spices as well as adding a subtle warmth.

It’s a nice rainy Sunday, perfect excuse to curl up on the couch, look through our online store & order a home delivery to arrive later in the week!

Our recommendations would be a bone in lamb roast option, a few kebabs & sausages for an easy BBQ dinner, one of our vegetable tray bakes, a nice bottle of wine, bacon & eggs, some and maybe some chuck steak for a lovely, long slow cook option.

Our free range lamb mince is seasoned with garlic, onion, spices, honey, haloumi Thistle Be Good's Egyptian Dukkah - a bold flavourful mix of roasted almonds, sesame seeds and an exotic mix of Middle Eastern spices.

COOKING INSTRUCTIONS
oven bake at 180◦C for 20 mins
air fry 160◦C for 15 minutes
pan fry on medium until golden.

Serve with warmed flatbreads, hummus, haloumi, sliced red onion, fresh coriander & squeeze of fresh lemon.

HERB ROASTED EASY CARVE LAMB
WITH SMASHED OLIVE OIL POTATOES AND TOMATO SALSA

We love a good lamb roast with crunchy roasted potatoes and this recipe certainly hits the mark.

If you haven’t tried lamb with Greenwood Barbecue’s Tree Bark Rub – make sure you do. It’s one of our favourite rubs to use with lamb. We love it so much so we sell a few different cuts of lamb with the rub on ready to cook. Once you try it, you’ll be converted.

Now onto the potatoes… crispy potatoes take time. They can’t be rushed. Try not to skip the step of cooling/drying the potatoes in the fridge – it’s the key to a good crunch.

Finally, the salsa adds the hit of freshness that lamb roasts need. It has just the right balance of salt and acidity to offset the richness of the roasted lamb leg.

Team this roast recipe with a leafy green salad or steamed veges and you’ll have a satisfying lamb roast for Sunday lunch or dinner.

This is a recipe Katrina Meynink created for us, specifically to help us showcase that a bone in lamb shoulder could, and should, be enjoyed in the warmer months of the year too. It's too bloody good to relegate to just a Winter time cook up. Don't you think?

In case you haven't already met... this beauty is a SLOW COOKED CUMIN AND SICHUAN PEPPER LAMB SHOULDER WITH RICE NOODLES AND GREENS.

Katrina says, "The beauty in this is the simplistic preparation and the hands-off cooking. Its show stopping eating at its finest. The key is a very long, (overnight is easiest) 12 hour cook of the lamb so it gives way at the mere suggestion of a fork; and the delectable mouth tingling warmth rather than spicy heat of the cumin and Sichuan crust.

The DIY serve yourself nature of this makes it perfect for entertaining family and friends. Pop it on just before you go to bed and have this resting late morning ready for a long lunch".

"I have the fondest memories of corned beef. It was a stalwart of my grandmothers’ dinner repertoire, something that rings true for so many of her generation. And now, whenever I sink my teeth into that soft, slightly salty meat; those glorious thick slices of pink, the shade of late summer sunsets and baby’s cheeks, I am instantly taken back to her kitchen, her dining table, her living room, her house. To her.

So it is with some trepidation that I try to wheel out anything other than her traditional efforts with the white sauce and the overcooked beans. But she also loved a Bloody Mary, and the pairings work beautifully here. The richness of the meat is a perfect bedfellow for the thin spice crust and the rich brothy tomato and celery infusion that only a slow cook can provide. It nods to the cook of old, with an update in flavour.

🔥 This weekend we have something a bit different available for the BBQ - 9+ Wagyu Flat Iron steaks.

👉 What makes Wagyu Flat Iron Steaks so special?
We don't get these very often.. especially with such a high marble score. Flat iron steaks aren't commonly available. They're from the oyster blade found in the shoulder that is usually cut into top blade steaks. However, the flat iron is fully trimmed to remove all sinew and display the amazing marbling.

🍽 They have a rich beef flavour and the marbling ensures they will be melt in mouth tender. These are best cooked hot and fast to medium rare and sliced against the grain to serve. 🔥🍴
