🐑 Lamb Rump with Crispy Smashed Potatoes

A simple, hearty dinner that’s packed with flavour and easy to make at home.

Ingredients:

🥩 Lamb
- 1 Lamb Rump
- 1 tbsp oil
- Salt
- Pepper

🥔 Smashed Potatoes
- Baby potatoes
- Butter
- Salt
- Pepper

Method:

1. Preheat your oven to 200°C.
2. Boil the potatoes until fork tender, then drain.
3. Place the potatoes onto a baking tray and gently smash them with a fork or potato masher.
4. Allow the potatoes to sit for 5 minutes so the steam can escape and they dry out slightly. This helps them become extra crispy in the oven.
5. Top with butter and season with salt and pepper.
6. Bake for 45 minutes, or until golden and crispy.
7. While the potatoes are cooking, coat the lamb rump with oil and season generously with salt and pepper.
8. Heat a frying pan over high heat and cook the lamb rump to your preferred doneness, turning occasionally for an even cook.
9. Allow the lamb to rest for 5 minutes before slicing.
10. Serve alongside the crispy smashed potatoes and enjoy!

🍯 Hoisin & Honey Glazed Pork Tenderloin

A delicious sweet and savoury pork tenderloin with hoisin, honey and Chinese five-spice.

Ingredients

-1 large pork tenderloin (about 450–500g)
-3 tbsp hoisin sauce
-2 tbsp honey
-2 tbsp soy sauce
-1 tsp Chinese five-spice

Method

1. Mix together the hoisin sauce, honey, soy sauce and Chinese five-spice.
2. Coat the pork in the marinade and refrigerate for at least 30 minutes.
3. Preheat oven to 200°C.
4. Transfer to a baking tray, brush with the reserved glaze and roast for 20–25 minutes, or until the centre reaches 63°C.
5. Rest for 10 minutes before slicing.

🥢 Perfect served with rice and Asian greens!
