Talits Estate is a family-owned vineyard and luxury holiday home in the Broke Fordwich winemaking region of the Hunter Valley. The estate sits on 50 acres of beautifully crafted gardens, olive trees and meticulously managed Chardonnay, Pinot Noir, Merlot and Shiraz vines. The 2023 Estate Merlot. Secondary malolactic fermentation. Twelve months in French Ermitage oak barriques.

The palate is plum, blackberry and a hint of mint chocolate — elegant, medium-bodied, with balanced tannins and a finish that lingers.

A lineage worth noting: a previous vintage scored 92 Points from James Halliday and took a medal at the Hunter Valley Boutique Wine Show.

The 2023 continues that form — Bronze Medal, 2024 NSW Small Winemakers Wine Show.

Update from the vineyard…

Two blocks at Talits. Two training systems.

The Pinot Gris is corded bilaterally — two arms extending in opposite directions from the trunk, carrying an even distribution of shoots along the fruiting wire. Balanced vigour, open canopy, consistent ripening across the row.

The Gamay runs unilateral. A single arm, one direction — better suited to a variety that benefits from tighter canopy control and slightly more concentrated energy through fewer, stronger shoots.

Cordoning decisions are made at planting and lived with for decades. They shape how the vine grows, how fruit develops, and what ends up in the glass.

Two neighbours. One valley.

The bathrooms at Talits are stocked with Hunter Lavender Farm — grown just down the road in Broke, by Marianne and JR, who left Sydney to farm lavender in the valley they fell in love with.

Australian botanicals. Local hands. The kind of detail that makes a stay feel like somewhere, not just somewhere nice.

A Bordeaux-inspired blend from Broke Fordwich — and certainly easy drinking.

Six days of skin contact in open vats. Secondary malolactic fermentation. Ten months in 3-year-old French oak.

The result is medium-bodied and generous — blueberry, cherry tomato and wild raspberry, with balanced tannins and a finish that invites another glass.

Drinking beautifully now. Will continue to develop over the next five years.

Limited to 1,800 bottles.

The second vintage from our estate Chardonnay vines — planted at Talits Estte in 2020, already producing something worth paying attention to.

Malolactic fermentation and lees stirring have created a wine that earns its complexity — tropical fruits, brioche and subtle oak, with discreet acidity and a structured, long finish.

It drinks beautifully now. It will reward patience just as well.

Hunter Valley Sémillon is one of Australia’s great white wine stories — and the 2025 vintage is a pure, focused expression of exactly why.

Fruit from Rothbury vines planted in the 1990s, harvested early morning, whole-bunch pressed and cool-fermented with a neutral yeast. Six months on fine lees for quiet depth and subtle texture.

The nose is fragrant with lemon myrtle. The palate is crisp and chalky — citrus, green apple, a hint of melon — and the finish is clean and long.

Drink it now with oysters. Or put it away for five to seven years and watch it become something else entirely.
