In my humble opinion, Winter days and slow-cooked lamb are one of life's great pairings.

Slow Cooking Lamb shoulder is one of my go to's because it's beautifully forgiving. A little prep, plenty of time, and the oven does the rest, transforming quality Amelia Park Lamb, produced by West Australian farmers in the beautiful South West, into a rich, tender meal that's as perfect for a family meal as it is for entertaining friends.

Rainy days call for warm meals that feed the soul ♥️🥘 Try our Massaman lamb curry recipe this season:

Pre-heat oven to 160°C.

Using a large oven proof pot, heat olive oil over medium high heat on the stovetop. Brown lamb shanks well on all sides to seal in juice and capture flavour.

Remove lamb shanks from the pot. Add ginger, kaffir lime leaves, curry paste and sugar.

Stir until fragrant (2 minutes). Add stock and coconut milk and stir until combined. Return lamb shanks to pot, and gently push into the curry sauce to submerge.

Cook shanks in oven for 1 hour, add potatoes and carrot, cook for a further ½ hour until meat and vegetables are tender.

Take pot out from the oven, remove lamb and vegetables (keep warm), then return pot to stovetop to simmer sauce to reduce until thickened. Add lime juice to finish.

For cucumber salad, whisk together lime juice, fish sauce and sugar in a bowl. Add cucumber, onion and chilli and toss in dressing to coat.

Serve alongside Massaman Lamb Shanks, roti and lime wedges.

My current food obsession… and soon to be yours.

This Korean-inspired slow cooked Beef Blade Roast using Amelia Park Beef is rich, sticky, comforting and almost ridiculously easy to make.
A simple marinade, a good sear, then cook low and slow until it’s glossy, fork-tender and filling the house with a smell that will have your favourite people racing to the table.

Our warm, comforting hyper-fixation meal of the season - Slow Cooked Lamb 🍂🍖🤎
Follow our recipe below for the best results:

Pre-heat oven to 200°C.

Place lamb in a large roasting pan, drizzle with olive oil and season to taste. Add herbs, garlic and lemon halves to pan and roast for 20 minutes until lamb is starting to colour.
Reduce oven temperature to 150°C.

Add remaining vegetables, stock and lemon juice to roasting pan.

Seal tightly with baking paper and foil, then return to the oven and cook for 4-5 hours or until meat is tender and falling off the bone.

Check liquid levels half way through, spoon liquid over the lamb, top up liquid if needed and continue to cook.

Serve the meat atop a platter of the veggies from the roasting tray and pour over the pan juices.
