We had a message come through asking for the details on our upcoming whisky release… so here they are.

Our very first Ipswich Single Malt Whisky:

🥃 Single malt whisky
🪵 Aged 2.5 years in a brand new French oak barrel
🍾 500ml bottles
🔢 Only 218 bottles in this release
✍️ Each bottle individually laser engraved and uniquely numbered
📦 Presented in a custom-designed box

And just to put this into perspective…

Once this release is gone, the next one won’t arrive until 2028.

This is the beginning of something very special for us here at Imbibis.

A small batch.
A long wait.
A big moment for Ipswich.

Available from the distillery this Saturday, 6 June, 12–4pm.

Did you know that Queensland wasn't always Queensland?

On 6 June 1859, Queensland officially separated from New South Wales and became its own colony.

And honestly, around our house, we're still pretty comfortable with that decision... especially at State of Origin time. 😏

You see, Maree was born in Queensland. Jason was born in New South Wales.

Some marriages are built on shared values. Ours is built on agreeing not to discuss Origin selections.

This Saturday marks Queensland Day, a celebration of our state's history, communities and achievements.

It also happens to be the day that Ipswich's very first whisky is released.

After years of planning, distilling, ageing and patiently waiting, our inaugural single malt whisky will finally be available from the distillery.

🥃 Limited release of just 218 bottles

Queensland separated from New South Wales 166 years ago.

And this Queensland Day, Ipswich gets its first whisky.

We reckon both were pretty good decisions.

Some moments feel pretty special… and this is definitely one of them. 🥃

As many of you know, Mayor Teresa Harding officially opened our Bundamba distillery back in 2022. Fast forward to today, and she’s once again supporting a huge milestone for us — the release of Ipswich’s very first whisky.

When we asked if she’d help us promote the launch, the answer was an enthusiastic yes! So naturally, we headed to one of Ipswich’s most recognisable landmarks for a quick photo and video shoot.

Also… we’re convinced the Mayor planned her outfit around the whisky colour palette. 😄

A huge thank you to Mayor Harding for supporting local business, local industry and helping us celebrate this historic first for Ipswich.

In the quiet glow of copper and oak… something special has been waiting. 🥃

On 6 June, we release Ipswich’s very first single malt whisky.

Crafted patiently.
Refined endlessly.
Perfected… to perfection.

Dark, rich, and unmistakably Imbibis — this is more than a whisky release for us. It’s the result of years of dreaming, distilling, testing, waiting, and tasting “just one more sample.” 😉

The countdown is on.

Today we welcomed Lance McCallum MP and Joan Pease MP for a behind-the-scenes tour of the distillery as part of Small Business Month.

We discussed the real challenges facing small business right now — everything from red tape and rising freight costs through to the realities of manufacturing locally in regional Queensland.

They also got a sneaky first look at Ipswich’s very first whisky ahead of its official launch on June 6… and judging by the reactions, we may need to put both MPs on the VIP tasting list. 🥃👀

We think Joan was especially impressed with the distillery — she even left with a little memento to remember her visit by.

A big thank you to Lance and Joan for taking the time to visit, listen, and support local small business.
