Epostres in Europe pt. 4 🇫🇷
I’ll be honest, France was never high on my list, purely because I’d always heard how difficult it is to find safe gluten free options here.
But I am VERY happy to report that while it’s definitely harder to find, it does exist! And when it does, it’s done incredibly well 👏
If you had told me years ago I’d be eating a freshly baked gluten free croissant in Paris, I would have laughed in your face.
And yet, here we are. The most buttery, flaky croissant I’ve ever had, and completely gluten free!!!
From , a bakery dedicated entirely to gluten free baking. I asked the owner why he chose this path, and his answer was simply that he wanted to challenge himself 🤯
Well, on behalf of coeliacs everywhere, thank you for that challenge 🥹
I tried to capture the lamination and flakiness in this video, but honestly, it doesn’t do it justice. I also tried their baguette-style bread and an apple pastry, and everything was just as incredible.
I’ve never attempted making croissants (or many French pastries) because they’re notoriously difficult to master gluten free. But after this trip, I’m feeling a little inspired 🤭
So who knows, maybe one day we’ll see something croissant-inspired at Epostres 🥐
Off to try more gluten free pastries… purely for research, of course 😋
