This is where the flavour in your slow-cooked brisket actually starts 🔥

Before you slow cook beef brisket, give it a really good sear first - yes, it means washing an extra pan, but here’s why it’s worth it.

🥩 More flavour - browning the outside of the beef creates those deep, rich, savoury flavours that you just won’t get from putting raw brisket straight into the slow cooker.

🔥 Better colour - a proper sear gives you that beautiful caramelised exterior rather than pale-looking beef.

🧅 And don’t waste what’s left in the pan - those little browned bits stuck to the bottom are packed with flavour. Deglaze the pan with some of your stock, wine or other cooking liquid, scrape up all that goodness and add it straight to your slow cooker.

For a really good sear:

Pat your brisket dry first, season it generously and get your pan HOT.

Add a little oil, then place your brisket in and leave it alone for a few minutes. You want to give it enough time to develop a proper golden-brown crust before turning.

Don’t keep moving it around - let the heat do the work.

Then it’s ready to go low and slow until the brisket is fall-apart tender 🤌

It’s only an extra 5-ish minutes at the beginning, but it’s one of those little cooking steps that can make a BIG difference to the finished dish.
