The Phantom Dark Side☠️🖤🥃
This beautiful Highwayman batch release is the third in the ale cask matured series. It’s a beautiful medium peated wh**ky that’s double matured, firstly in PX sherry casks and secondly in Young Henry’s Ale casks. The colab link with Young Henry’s goes back well over a decade with friendships dating back over 2 decades! They made a beautiful unhopped red ale infused w cold brew coffee and cacao nibs then aged that in ex-HWM Wh**ky casks. After maturing for a couple of months the b**r was tipped and the casks sent back up to Dan to use again for the second maturation of this fine dram! Unfiltered and undiluted this wh**ky weighs in at 55% and produced 150 bottles.
Nose-
Wet to***co, rum and raisin, chocolate fudge and w**e gums. Notes of mocha intertw**ed with black Forrest cake.

Palate-
Intense chocolate and coffee notes upfront leading into a berry jaminess and sweet maltiness. Then comes the salt, the smoke and the earthiness. Perfect integration of PX casks, ale casks and a medium earthy peat smoke.

Finish-
Super long, thick and oily finish that keeps on giving…

E.S.P - Exceptional sherried perfection & it’s an outstanding single cask that was hand selected by Dan for its brilliance. It has spent its whole life aging in a single Pedro Ximinez sherry cask and was the pick of half a dozen casks of the same type and age. It’s the only one to be bottled as a single cask without a second maturation or finishing due to its exceptional quality. Loaded with sweet caramels and dark berry fruits as you’d expect but also giving a beautiful saw dust like oakiness without being too cask dominating. Superb balance leaving you wanting more after every sip. Bottled at a cask strength of 55% and yielding 130 bottles, it won’t last long….
