Soon, Shae from Evolve Floral By Shae | Melbourne Florist will transform these incredible creations into stunning table installations for an upcoming AURUM experience, celebrating provenance, local produce and the people who make our region so special.

A pairing worth discovering at the Saturday AURUM Cellar Door.Β Β 

Ruby is our interpretation of a light red, a co-fermententation of 50% honey and 50% whole berries β€” blueberries, raspberries, blackcurrants and sour cherries. After fermentation, it rests for 12 months in French oak before bottling, building texture while letting the fruit stay vibrant and bright.

At the Cellar Door, we pour it alongside blue cheese. The richness of the cheese meets fresh berry fruit, gentle honey notes and bright acidity in one of our favourite pairings.
