I still remember an older Australian lady who used to visit us at the Yandina Market. She was living in a nursing home and started growing microgreens because she felt the food there was not always fresh or nutritious enough.

What started with a few trays and seeds became something much bigger.

She grew beautiful microgreens, came back for more supplies, and even other people in the nursing home became interested in what she was growing. It gave her fresh food, but also something to care for, something to talk about and something to feel proud of.

That is why I believe microgreens can be such a wonderful idea for seniors, especially those who are less mobile or living in aged care. You do not need a garden, heavy work or a lot of space. Just a small tray, seeds, soil, water and a little daily care.

Fresh nutrition can grow right within reach.

Nothing tastes better than a freshly caught fish served with a handful of fresh microgreens grown right there on board.

Our latest Easy Microgreens blog is all about growing microgreens while sailing, and how simple it can be to enjoy fresh greens every day, even when fridge space is limited and the nearest shop is far away.

When you are out on the water, fresh food can be harder to keep, but microgreens make it easy to add something crisp, colourful, nutritious and full of flavour to your meals. A few small green and white trays, some good seeds, a little light, and you can grow pea shoots, broccoli, mustard, red cabbage and other microgreens inside your boat or catamaran.

It is a simple way to bring a little garden life on board and enjoy fresh greens with fish, wraps, salads, eggs, soups, or any easy sailing meal.

What really happens in the first days of a microgreen’s life

When you place a tiny seed on soil and give it a bit of water, something very quiet but very powerful starts to happen almost immediately.

Inside that seed, everything it needs for the first stage of life is already there. The moment moisture reaches it, the seed wakes up. It begins to swell, the outer shell softens, and the first thing that appears is not a leaf, but a root.

That first root, called the radicle, grows downwards, even in the dark. It doesn’t need light yet. Its only job is to anchor the plant and start drawing in water and minerals. This is why, in the early days, microgreens don’t need light straight away. They are living off what was stored inside the seed.

After the root has settled, the shoot begins to push upward. At this stage, the plant is still pale, sometimes almost yellow. This is normal. Chlorophyll, the green pigment we all associate with plants, only forms once the young shoot is exposed to light.

When light finally reaches those first leaves, something changes. The plant starts producing chlorophyll, turning green, and begins photosynthesis. This is the moment the microgreen becomes a little food factory, using light, water, and air to create energy and nutrients.

Those first leaves you see are called cotyledons. They are not the true leaves yet, but they play a crucial role. They help the plant gather light and grow quickly, which is why microgreens can be harvested in just a few days.

In this short phase of life, the plant is growing fast, focused, and full of potential. That’s also why microgreens are so nutrient-dense. The energy is concentrated, the growth is intense, and nothing has been wasted yet on stems or large structures.

Watching this process up close reminds you how much is already built into something so small. With just water, light, and a bit of patience, life does the rest.

This is the part I love most about growing microgreens. Not the harvest, not the yield, but those first few days where everything quietly begins.
