It’s official! Bremer Valley Agave is now open to the public! 😁

Our website is live, and pre-orders for our First Spirit are now open.

Two small batches.
Individually numbered bottles.
Wild Agave americana, harvested from the Bremer Valley.

What started with a few plants and a question has finally made its way into a bottle and ready to be shared.

This is our First Spirit, and we look forward to sharing it with you.

Spring is here, which means we’re back out in the fields selecting the wild Australian agave that will become part of our 2027 harvest and spirits.

Sometimes, the opportunity is right in front of you.

What started as a lavender trial that didn’t go to plan turned into a conversation about the agave growing on our land — plants we’d known were there for years, but had never really paid much attention to.

One conversation led to a question:

Could we make something from ours?

That question sent us down a path of research, where we discovered the incredible traditions and techniques behind agave spirits in Mexico — and quickly fell in love with the craft, the process and the patience behind them.

From there, we found an opportunity to take those traditional practices and explore what they could become here, with the agave growing wild in the Bremer Valley.

After nearly 2 years of learning, experimenting, and patience later, that opportunity has become our first spirit.
