Those who already shop at Fyshwick Gourmet Organic know just how unique their offering is.

Sweet, salty and packed with flavour, these Marinated Grilled Pork Skewers are made with lemongrass, garlic, spring onion and a touch of honey, then finished with spring onion oil.

INGREDIENTS

• 800g scotch pork steaks or pork neck, cut into thin strips
• 1 garlic clove
• 2 lemongrass stalks, white part finely chopped
• 1 green chilli, finely chopped (optional)
• 4 spring onions, white part finely chopped, green tops reserved
• 1 tbsp honey
• 1 tbsp sweet soy sauce (kecap manis)
• 2 tbsp fish sauce
• 4 tbsp vegetable oil
• Black pepper
• Sea salt
• 16 bamboo skewers

METHOD

Pound the garlic, lemongrass, chilli and spring onion whites into a rough paste. Mix with the honey, sweet soy, fish sauce and 2 tablespoons of vegetable oil. Add the pork, season with black pepper and toss well to coat. Cover and refrigerate overnight, or for at least 4 hours.

For the spring onion oil, finely slice the reserved green tops and heat with the remaining vegetable oil and a pinch of salt for around 2 minutes, keeping the onions green. Set aside to cool.

Soak the bamboo skewers in water and remove the pork from the fridge 30 minutes before cooking. Thread the pork onto the skewers, then grill over high heat for 8–10 minutes, turning every 2 minutes, until cooked through. Serve straight away with the spring onion oil drizzled over, alongside steamed rice and a fresh green salad.

Fresh, green and full of spring flavour, this spring minestrone recipe is packed with peas, broad beans, asparagus, broccolini and fennel, finished with a spoonful of pesto.

INGREDIENTS

• ¼ cup olive oil
• 1 onion, finely chopped
• 6 spring onions, white part finely chopped
• 2 garlic cloves, finely chopped
• ¾ cup (95g) peeled broad beans
• ½ cup (80g) shelled fresh peas
• 1 bay leaf
• Peeled zest of ½ lemon
• 1.2 litres vegetable or chicken stock
• 1 fennel bulb, finely chopped
• ½ can (150g) chickpeas, drained
• 6 asparagus spears, woody ends removed
• 1 bunch broccolini
• 50g baby spinach leaves
• 4 tbsp fresh pesto, optional
• Chives or basil, to garnish

METHOD

Heat the olive oil in a large saucepan over medium heat. Add the onion, spring onion and garlic and cook for 12–15 minutes until soft and translucent.

Blanch the broad beans in salted boiling water for 1 minute, then remove and peel. Cook the peas in the same water for 5 minutes, then drain and set aside.

Add the bay leaf, lemon peel, stock and fennel to the onion mixture and simmer for 3 minutes. Add the peas, chickpeas, asparagus and broccolini stems and cook for another 3 minutes. Stir through the spinach and broad beans until wilted, then season with salt and pepper.

Remove the bay leaf and lemon peel. Transfer half the soup to a bowl and blend the remaining half until smooth. Return the reserved soup to the pot and stir to combine.

Serve topped with pesto, chives or basil and a drizzle of olive oil. Shop everything you need at the Markets and save this one for your first taste of spring.

A twist on a classic sticky date pudding, with sweet pears, dates and walnuts baked into a beautifully spiced olive oil cake. Best served warm with pouring cream or a scoop of ice cream.

INGREDIENTS

• 60ml (¼ cup) extra virgin olive oil, plus extra for greasing
• 150g fresh Medjool dates, pitted and roughly chopped
• 1 tsp bicarbonate of soda
• 3 firm ripe Beurre Bosc pears
• 150g (¾ cup) brown sugar
• 1 tsp vanilla extract
• 2 eggs
• 35g (⅓ cup) coarsely chopped walnuts (optional)
• 225g (1½ cups) plain flour
• 2 tsp baking powder
• 2 tsp ground ginger
• ½ tsp mixed spice

METHOD

Preheat oven to 180°C (160°C fan-forced). Grease and line a 22–23cm round cake tin.

Place the dates and bicarbonate of soda in a bowl. Pour over 250ml (1 cup) boiling water and leave to soak for 20 minutes. Peel two pears and cut into wedges, removing the cores. Coarsely grate the remaining pear into the date mixture.

Beat the olive oil, brown sugar and vanilla for 2–3 minutes until creamy. Add the eggs one at a time, beating well. Stir through the date mixture and walnuts. Sift in the flour, baking powder and spices and gently stir to combine. Pour into the prepared tin and arrange the pear wedges over the top.

Bake for 45 minutes or until a skewer comes out clean. Leave for 10 minutes before removing from the tin. Serve warm with pouring cream or a scoop of ice cream.

This is a twist on the French classic upside-down apple tart, Tarte Tatin. Puff pastry is used instead of the traditional shortcrust and coconut sugar with its natural soft toffee flavour notes blend with the spices to creates a buttery caramel.
