Jujube, Oat & Cinnamon Muffins

Ingredients – makes 10–12
1 cup rolled oats
1 cup plain flour
½ cup chopped dried jujubes
½ cup brown sugar
1 tsp cinnamon
2 tsp baking powder
½ tsp salt
1 egg
¾ cup milk
⅓ cup melted butter or coconut oil
1 tsp vanilla

Method
Preheat oven to 180°C and line a muffin tray.
Combine oats, flour, sugar, cinnamon, baking powder and salt.
Stir in chopped jujubes.
Whisk egg, milk, melted butter and vanilla together.
Gently combine wet and dry ingredients—don't overmix.
Spoon into muffin cases, filling about ¾ full.
Bake for 18–22 minutes, until golden and a skewer comes out clean.
Cool for 5 minutes, then enjoy!

Tip: Soak the chopped jujubes in warm water for 10 minutes before adding for softer, juicier pieces.
