We hand roll New York-style bagels, then classically boil and bake them to give them their distinct and delicious chew. We take a lot of care in each bagel we bake. As a result, we achieve the full flavour and rich texture of the real handmade bagel -- a product that Melbourne well deserves. We use minimal yeast and rely on long, cold rises to develop an authentic flavour. This artisanal process t

akes 24 hours from start to finish. Our bagels are made with simple, quality ingredients: water, yeast, salt, malt -- and the most important, of which is locally milled flour. We offer the following flavours: Plain, salty garlic, sesame, poppy, and everything (a mix of all of the flavours + onion!)
