Tucked into the rolling hills of Carwoola, NSW, Stoney Flat Truffles is a small, family-operated truffière dedicated to producing premium black truffles (Tuber melanosporum). Established in 2017, our journey began with a passion for the land, a handful of inoculated oak trees, and a belief in doing things the right way — slowly, seasonally, and sustainably.
Our truffles grow beneath carefully selected French and English oak trees, tended year-round in rich, balanced soils. Each winter, we harvest by hand with the help of our loyal truffle dogs, trained to sniff out the ripest truffles at the peak of their aroma.
