This is a 1 Man beekeeping business specialising in Raw Cold Extracted Honey. I run around 200 Hives based in the Tamborine area, my bees collect their honey from a variety of local Austrian wild floral sources. Cold Extraction is what is required to produce the highest quality Pharmecutical grade Manuka honey, as heating of any kind breaks down the antibacterial properties and effects the flavou

Now I don't produce Manuka honey, but what is good for the Goose is good for the Gander and I frequently hear from customers that my Cold extacted honey is the best honey they have eaten. but what does it mean? Basically at no point is my honey exposed to temperatures exceeding what it wold get to in a beehive 32-38 degrees C. So no steam uncappers or electric hot knives for ucapping combs, no heated extractors so it can be pumped and filtered and certainly no pasteurisation barrels to cook it at 50 degrees for over 48 hours so it won't ever crystallise. It's just honey, the way the bees made it and in my opinion the way we should eat it. All Raw Honey is Subject to Crystallisation over time and at low temperatures, this does not mean it has gone 'bad' in fact if your honey never crystallises you should be far more worried than if it does. However we store our honey at Beehive temperature to discourage crystallisation, if you're onselling our product we recommend that during winter which is really the only time crystallisation is an issue, that you store it in a warm area. I do not Water Down or Mix my Honey with inferior products such as Syrups or Honey form Overesas or cheaper suppliers. I never use Chemical treatments on my bees or treat with Antibiotics, so my honey is free of such contaminants. All my Honey is seasonal so I will Run out of some Varieties as the season progresses, although I try and keep as substantial stockpile for Winter when the bees stop producing, so I do not leave my customers shelves empty. Lastly I am I Wholesale supplier, my minimum order quantity is 20kg and am happy to sell that to private consumers or Businesses that wish to stock my product. Beacause I'm just 1 man business so I cannot afford the time to be selling individual jars to customers, for Smaller quantities I Retail my honey at Mt Tamborine State Shool Market on the last Sunday of every month and Mt Tamborine Makers Market on the first Sunday of every month.
