One event, four canapés!

Join us for part 3 as Cooper talks you through a selection of our current seasonal canapés, these were chosen for a 120-person wedding in the Hunter Valley.

This canapé really needs no introduction. It has held the spot as our most popular canapé for a number of years now, and we don’t see it getting knocked off that pedestal any time soon.

These golden bites of crispy perfection have become a staple on our menu, but they are a true labour of love. We make them entirely from scratch, starting with our risotto recipe and using fresh produce and quality ingredients so they’re always tasty.

Then comes the contrast, a soft and creamy centre with a perfectly crisp outer shell that we smother in grated parmesan cheese because really… what could be better than more cheese?

Banquet style dining has remained our most frequently booked service for a number of years now, and we understand why. This style of dining feels like a family gathering, with abundant platters of food placed down the centre of the table so you and your guests can build your ideal plate.

But what exactly does this dining style look like?

Let’s take a closer look at a few of our menu options that you can select to create your perfect banquet feast. You can choose to start with a selection of roaming canapés, served as you mingle. As you make your way to the table, you can begin your feast with a banquet entrée, before the main course of two generous proteins and three delicious sides are placed down the table for you and your guests to pass along and share. You can then finish with a scrumptious dessert grazing platter.

This style of dining is relaxed and feels familiar, creating a beautiful atmosphere for your event!

Dale and James

On Friday the 24th of April we made our way to the stunning Villa Toscana to be part of Dale and James’ gorgeous wedding!

This wedding really felt like a celebration, with so much laughter and fun from start to finish. Dale and James did such an amazing job creating a warm and welcoming atmosphere, these two know how to throw a party!

We kicked off our service during cocktail hour with a selection of three canapés that our team served roaming to the 95 excited guests. Following canapés, as guests made their way to the stunning tables under the stars, our team was preparing an abundant banquet main course that really emphasised that family and connected feel Dale and James wanted. It was the perfect way to bring everyone together and carry that sense of celebration through the evening.

Thank you Dale and James for trusting us to create this dining experience for you and for allowing us to be part of such an important day. We wish you both every joy as you start this beautiful new chapter.

Join us for part 2 as Cooper talks you through a selection of our current seasonal canapés, these were chosen for a 120-person wedding in the Hunter Valley.

This canapé is mild in spice but packed with unbelievable flavours, drawing inspiration from India.

The tandoori chicken tikka is the heart of the dish, marinated to build depth of flavour and then cooked to be tender with just the right amount of char. It brings a warm, gently spiced base without being overpowering.

The pickled fennel cuts through with a sharp, slightly sweet acidity and a satisfying crunch. Finally, the mint raita ties it all together, cooling, fresh and creamy, balancing the spices and rounding out the dish in a way that feels complete.

All served on soft roti bread as the perfect base to hold everything together in one bite… or maybe two!

We had the pleasure of catering Waterford Sales community event!

The purpose of the evening was to bring together new residents who have recently purchased land in the development, giving them the chance to meet, share a meal and begin building a sense of community from the very start.

Set under the stars, two long tables brought everyone together as we served a generous buffet to 122 adults and 21 kids. It created such a warm and uplifting atmosphere, where people could settle in, take their time and enjoy the moment.

Guests built their ideal plates and connected over a shared meal, which we think is one of the best ways to get to know your soon to be neighbours. There was a real sense of ease to the evening, with laughter, conversation and that feeling of people genuinely enjoying being together!

We started with a selection of four canapés while guests enjoyed the stunning property, before moving into the marquee where three long tables were perfectly set for 120 guests to enjoy an abundant banquet. Their menu is below:

Canapés:
