As you can see from these images from last weeks hunting - feral fallow deer are well established across the Colac Otway region. While they can have a significant impact on native vegetation, farmland and the environment, they’re also an incredible wild food resource when professionally and responsibly harvested.

Wild venison is naturally lean, high in protein and rich in nutrients including iron, zinc and vitamin B12. These animals live free-ranging lives, feeding on the grasses and native vegetation of our region.

Professional night harvesting using thermal optics gives Anthony a significant advantage: visibility and precision. Thermal technology allows him to clearly identify deer in darkness and, importantly, to assess whether the conditions are right to take a shot. It assists with accurate identification, awareness of what is around and behind the animal, and precise shot placement.

Night harvesting also allows deer to be approached when they are generally less disturbed by human activity. Combined with professional equipment, careful positioning and strict harvesting practices, this supports the Dama Dama goal of achieving an immediate, ethical kill with minimal stress to the animal.

We think there is something pretty special about taking an introduced species that needs to be managed and turning it into nutritious, premium-quality food rather than allowing that resource to go to waste.

“No ... that’s not a bullet hole!” 😂🦌

One of our dinner guests looked at this slice of venison and asked if the hole was from the bullet ...

While it gave us a good laugh (because that hole is actually from the spike of the rotisserie after being deliciously cooked over hot coals) it also sparked a great conversation about how Anthony harvests the wild fallow venison you get to eat.

Unlike recreational hunting, Dama Dama is required to harvest deer using a precisely placed head shot. This isn’t just about accuracy - it’s a legal requirement designed to protect both animal welfare and food quality.

A correctly placed head shot:
* Provides immediate insensibility, ensuring the most humane harvest possible.
* Prevents bruising and damage to the premium cuts, maximising meat yield.
* Reduces the risk of contamination that can occur with body shots, helping produce the safest, highest-quality venison.

WE ARE BACK!

We have just received the good news that we can recommence harvesting very soon. Castle Estate wild meat inspection will be underway in the next week or so. Once all is in order and signed off by the relevant authorities we are good to resume harvesting.

This is fantastic news for our small business. What initially looked like the end for us,is now a new beginning. We want to thank all those who reached out to show your support for us. It meant alot to us at a challenging time.

So, we will be restocking restaurants and taking online orders from the 10th of June.

Our first Farmers Market will be Torquay on Saturday 13th of June. Then the 20th at Torquay and 21st at South Geelong.

We look forward to catching up with everyone again very soon. Thanks for your support.
