π₯©π₯ LITTLE CREEK KITCHEN β SLOW-SMOKED BEEF BRISKET π₯π₯©
Thereβs nothing quite like a properly cooked brisket β a deep smoky bark, tender beef and plenty of flavour.
π₯© WHAT YOU'LL NEED
β’ 1 Little Creek beef brisket
β’ 2 tbsp coarse sea salt
β’ 2 tbsp cracked black pepper
β’ 1 tbsp garlic powder
β’ 1 tbsp onion powder
β’ 1 tbsp smoked paprika
β’ 1 tbsp brown sugar
β’ 1 tsp cumin
π₯ HOW TO COOK IT
1οΈβ£ PREP
Trim the excess fat, leaving around 5mm, then pat the brisket dry.
2οΈβ£ SEASON
Mix your seasonings and coat the brisket generously on all sides. Let it sit at room temperature for 30β60 minutes.
3οΈβ£ LOW & SLOW
Preheat your smoker to 110β120Β°C. Place the brisket fat-side up and smoke for approximately 6β8 hours, or until the internal temperature reaches 92β95Β°C.
Spritz with water or apple juice every 1β1Β½ hours to help keep the surface moist.
4οΈβ£ REST
Wrap the brisket in butcher paper or foil and rest in a warm oven that's switched off for at least 1 hour.
5οΈβ£ SLICE & SERVE
Slice against the grain, serve up and enjoy! π₯
