Ingredients
Apple Filling
1 large Cosmic Crisp apple, peeled and finely diced
10g unsalted butter
1 tbsp brown sugar
½ tsp ground cinnamon
1 tsp lemon juice
Pinch of flaky sea salt
30g digestive biscuits, finely crushed
Cream Filling
150g thick full-fat Greek yoghurt
100g mascarpone
2 tbsp icing sugar
1 tsp vanilla bean paste
To Assemble
12 rice paper sheets
Warm water
Icing sugar, for dusting
Method
Melt the butter in a small frying pan over medium heat. Add the apple, brown sugar, cinnamon, lemon juice and salt. Cook for 3–4 minutes, stirring occasionally, until the apple is just tender. Transfer to a bowl and leave to cool completely.
Once cooled, stir through the crushed digestive biscuits.
In a bowl, combine the Greek yoghurt, mascarpone, icing sugar and vanilla until smooth. Cover and refrigerate for 1 hour, or until slightly firm.
Dip one rice paper sheet into warm water for 2–3 seconds until just pliable and place onto a clean tea towel. Dip a second sheet and place it directly on top to create a double layer.
Spoon about 2 tablespoons of the cream filling into the centre, then top with a generous teaspoon of the apple mixture.
Bring the rice paper up and over the filling, pleating as you go to completely enclose it. Gently smooth the surface with damp hands if needed.
Repeat with the remaining ingredients.
Refrigerate for 30 minutes until the rice paper becomes soft and chewy.
Dust generously with icing sugar just before serving.

Serves: 4 (16 wontons)
Ingredients:
Apple Filling
2 Cosmic Crisp apples, peeled and diced into 5mm cubes
20g unsalted butter
35g brown sugar
1 tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of flaky sea salt
1 tsp vanilla bean paste
1 tsp cornflour
1 tbsp water
1 tsp lemon juice
Wontons
16 square wonton wrappers
1 egg, beaten
Olive oil spray or melted butter
Whipped Vanilla Mascarpone
150g mascarpone
1 tbsp pure maple syrup or icing sugar
½ tsp vanilla bean paste
To Finish
Icing sugar, for dusting
Ground cinnamon, for a light dusting (optional)

Method:
Melt the butter in a frying pan over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg and salt. Cook for 5–6 minutes, stirring occasionally, until the apples have softened.
In a small bowl, combine the cornflour and water. Stir into the apples along with the vanilla and lemon juice. Cook for 1 minute until the mixture is glossy and thickened. Transfer to a bowl and cool completely.
Meanwhile, make the whipped vanilla mascarpone. In a bowl, whisk together the mascarpone, maple syrup (or icing sugar) and vanilla until smooth and light. Refrigerate until ready to serve.
Place a wonton wrapper on a clean work surface. Spoon about 2 teaspoons of the cooled apple filling into the centre.
Brush the edges with beaten egg. Fold into a triangle (or rectangle for a mini pie look), pressing firmly to seal and removing any air pockets.
Lightly spray both sides with olive oil or brush with melted butter.
Air fry at 190°C for 7–9 minutes, turning halfway, until golden brown and crisp.
Arrange the warm wontons on a serving platter with generous dollops or a swoosh of the whipped vanilla mascarpone. Finish with a dusting of icing sugar and, if desired, a light sprinkle of ground cinnamon. Serve immediately while crisp.

Ingredients
2 Cosmic Crisp apples
200g good-quality dark or milk chocolate, roughly chopped
1 tsp coconut oil (optional)
2 tbsp toasted pistachios, finely chopped
2 tbsp freeze-dried raspberries, roughly crushed
2 tbsp toasted coconut flakes
Method
Line a tray or large plate with baking paper.
Core the apples, then slice crosswise into 1cm-thick rings. Pat the apple rings completely dry with paper towel.
Place the chocolate and coconut oil, if using, into a heatproof bowl. Microwave in 20-second bursts, stirring between each burst, until smooth.
Dip each apple ring halfway into the melted chocolate, allowing any excess to drip away.
Immediately sprinkle with toasted pistachios, freeze-dried raspberries or toasted coconut flakes.
Arrange on the prepared tray and refrigerate for 20–30 minutes, or until the chocolate is completely set.

185g unsalted butter, melted and cooled slightly
180g caster sugar
2 large eggs
2 tsp vanilla bean paste
260g plain flour
2 tsp baking powder
½ tsp bicarbonate of soda
1½ tsp ground cinnamon
¼ tsp freshly grated nutmeg
½ tsp fine sea salt
Apple Topping
1 Cosmic Crisp® apple, very thinly sliced
1 tbsp caster sugar
½ tsp ground cinnamon
To Serve
Whipped mascarpone
Icing sugar
Method
Preheat the oven to 170°C fan-forced. Grease and line a 21cm round cake tin.
Coarsely grate 2 apples, including the skin, discarding only the cores.
In a large bowl, whisk together the melted butter, caster sugar, eggs and vanilla until smooth.
Stir through the grated apple.
Add the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt. Fold gently until just combined.
Spoon the batter into the prepared tin and smooth the surface.
Arrange the thin apple slices over the top in a slightly overlapping pattern.
Mix the caster sugar and cinnamon together and sprinkle evenly over the apples.
Bake for 50–60 minutes, or until golden and a skewer inserted into the centre comes out clean.
Cool in the tin for 15 minutes before transferring to a wire rack.
Dust lightly with icing sugar and serve warm with whipped mascarpone.

Ever tried apple fries? These Cosmic Crisp Apple Fries are sure to be a crowd-pleaser!

Serves: 4
Ingredients:
Apple Fries
2 Cosmic Crisp® apples
150g tempura flour
180–200ml ice-cold sparkling water
Vegetable oil, for frying
Cinnamon Sugar
60g caster sugar
1½ tsp ground cinnamon
Salted Caramel Dip
150g thick salted caramel sauce

Method:
Peel the Cosmic Crisp® apples. Cut each apple into four cheeks, removing the core, then slice each cheek into batons about 1cm thick. Pat dry well with paper towel.
Heat 5–6cm of vegetable oil in a medium saucepan to 170°C.
Place the tempura flour into a bowl. Gradually whisk in the ice-cold sparkling water until just combined. The batter should be the consistency of thickened cream. Don’t overmix—a few small lumps are perfectly fine.
Working in batches, dip the apple batons into the batter, allowing any excess to drip off before carefully lowering them into the hot oil.
Fry for 2–3 minutes, turning occasionally, until lightly golden and crisp. Transfer to a wire rack for 30 seconds.
Combine the caster sugar and cinnamon in a shallow bowl. While still warm, toss the apple fries in the cinnamon sugar until evenly coated.
If needed, stir the thickened cream through the salted caramel sauce until smooth and spoonable.
Stand the apple fries upright in a small bowl or ramekin lined with baking paper and serve immediately with the salted caramel dipping sauce.
