Grilled Cheese Sandwich with Caramelised Apples⁠

Ingredients:⁠

• Unsalted butter⁠
• 2 Cosmic Crisp apples, thinly sliced⁠
• Granulated sugar⁠
• 4 slices sourdough bread⁠
• Butter for grilling⁠
• 70g grated low-moisture mozzarella⁠
• 70g grated vintage cheddar⁠

Method:⁠

1. Caramelise the Apples⁠
Melt some butter in a pan over medium heat. Add the apple slices and a sprinkle of sugar. Cook for 8–10 minutes until golden and jammy, but still with a little bite. Set aside.⁠

2. Assemble the Sandwich⁠
Melt butter in a cast iron pan over low-medium heat. Place one slice of sourdough in the pan.⁠
Top with mozzarella, cheddar and caramelised apples. Add the second slice of bread, buttered side up.⁠

3. Grill the Sandwich⁠
Cover the pan with a lid to help melt the cheese.⁠
Cook for 3–4 minutes, flip gently and cook until both sides are golden and the⁠
cheese has melted.⁠

4. Serve⁠
Remove from the pan, slice in half and serve warm.

These Upside Down Puff Pastries with Cosmic Crisp Apples⁠ are the perfect addition for your next dinner party!⁠

Ingredients:⁠

• 375g Careme All Butter Puff Pastry (1 sheet)⁠
• 2 Cosmic Crisp apples, thinly sliced⁠
• 2 tbsp honey⁠
• 1 tsp fresh thyme leaves⁠
• 1 egg, lightly beaten (for egg wash)⁠

Method:⁠

1. Preheat the Oven⁠
Preheat your oven to 200°C (fan-forced). Line a baking tray with parchment paper.⁠

2. Prepare the Apples⁠
Thinly slice the Cosmic Crisp apples.⁠

3. Arrange the Apples⁠
Spread a thin layer of honey on the parchment paper. Arrange the apple slices evenly on top, slightly overlapping. Drizzle over a little more honey and sprinkle with thyme leaves.⁠

4. Place the Pastry⁠
Lay the puff pastry sheet on top of the apples.⁠
Gently press down the edges with a fork to seal.⁠

5. Egg Wash⁠
Brush the top of the pastry with beaten egg for a golden finish.⁠

6. Bake⁠
Bake for 20 minutes, or until the pastry is golden and cooked through.⁠

7. Rest and Flip⁠

Craving a sweet afternoon pick-me-up? These delicious Toffee Apple Date Wraps are sure to hit the spot 🍎⁠

Ingredients⁠

• 1 Cosmic Crisp apple, unpeeled⁠
• 9 Medjool dates, pitted⁠
• 180g dark chocolate⁠
• 90g coconut oil (Copha)⁠
• 1 tbsp toasted flaked almonds (or your nut of choice)⁠

Method⁠

1. Prepare the Date Wrap⁠
Place a piece of plastic wrap on a flat surface.⁠
Squish the pitted Medjool dates onto the plastic wrap, ensuring they form an even layer around the size of the apple. Cover with baking paper and gently flatten the dates using a rolling pin or your⁠ hands to create a smooth, even sheet. The dates should be thin and wide enough to⁠ wrap the apple entirely.⁠

2. Wrap the Apple⁠
Once the date layer is flattened, place the whole Cosmic Crisp apple in the centre. Carefully wrap the flattened dates around the apple, ensuring it’s evenly coated. The dates should stick to the apple and form a chewy, smooth layer.⁠

3. Melt the Chocolate⁠
In a heatproof bowl, combine the dark chocolate and coconut oil (Copha). Melt together over a double boiler or in the microwave in 20-second intervals, stirring between each, until smooth and glossy.⁠

4. Coat the Wrapped Apple⁠
Carefully dip the date-wrapped apple into the melted chocolate, making sure it’s⁠ evenly coated. Allow any excess chocolate to drip off. There will be leftover chocolate, which can be⁠ stored for more toffee apples or other recipes.⁠

5. Top with Nuts⁠

Sunday brunch just levelled up! Imagine fluffy pancakes stacked high with the sweetest, juiciest Cosmic Crisp apples.⁠

Ingredients:⁠

• 4 Cosmic Crisp apples⁠
For the buttermilk pancake batter:⁠
• 240g plain flour⁠
• 25g sugar⁠
• 1½ tsp baking powder⁠
• 1½ tsp bicarbonate of soda⁠
• ½ tsp salt⁠
• 590ml buttermilk⁠
• 2 large eggs⁠

For the cinnamon sugar:⁠
• 50g granulated sugar⁠
• 1½ tsp ground cinnamon⁠
• Extra virgin olive oil (for frying)⁠

For serving:⁠
• Greek yoghurt⁠
• Fresh apple slices⁠

Method:⁠

1. Prepare the Pancake Batter⁠ ⁠
In a large bowl, whisk together the plain flour, sugar, baking powder, bicarbonate of⁠ soda, and salt. Make a well in the centre and pour in the buttermilk. Crack the eggs into the well.⁠
Gradually whisk the wet ingredients into the dry, working outwards. Don’t overmix; some lumps are okay. Let the batter sit for 15 minutes.⁠

2. Slice the Apples⁠
While the batter rests, core the Cosmic Crisp apples and slice them into rings.⁠

3. Prepare the Cinnamon Sugar⁠
In a small bowl, mix together the granulated sugar and cinnamon. Set aside.⁠

4. Fry the Apple Rings⁠
Add a small amount of extra virgin olive oil to a non-stick pan over medium-low heat. Dip each apple ring into the pancake batter, ensuring it’s fully coated. Ingredients⁠

• 2 Cosmic Crisp apples, cored and sliced in half⁠
• ½ cup rolled oats⁠
• 1½ tsp plain flour⁠
• 1 tsp ground cinnamon⁠
• 2 tsp brown sugar⁠
• 20g salted butter, melted⁠
• 20g maple syrup⁠

Method⁠

1. Core the apples, then slice each one in half.⁠

2. In a small bowl, combine the rolled oats, plain flour, cinnamon, brown sugar, melted butter and maple syrup.⁠

3. Mix until the oats are well coated and crumbly.⁠

4. Place the apple halves cut side up.⁠

5. Spoon the oat crumble generously over each apple half.⁠

6. Preheat the air fryer to 160°C.⁠

7. Place the apples in the basket, cut side up.⁠

8. Cook for 15–18 minutes or until tender and golden.⁠

McDonald’s-Style Apple Pies with Cosmic Crisp Apples⁠

Ingredient:⁠

• 375g Careme All Butter Puff Pastry (1 sheet)⁠
• 4 Cosmic Crisp apples, peeled, cored, and cut into chunks⁠
• 57g salted butter⁠
• 115g brown sugar⁠
• 2 tsp ground cinnamon⁠
• ½ tsp salt⁠
• Juice of 1 lemon⁠
• 3 tsp cornflour⁠
• 1 tbsp water⁠
• 1 egg, lightly beaten (for egg wash)⁠
• MINGLE Jords’ Nan’s Apple Pie Topper (for sprinkling)⁠

Method:⁠

1. Cook the Apple Filling⁠
Melt the butter in a shallow saucepan over medium heat. Add the apple chunks, brown sugar, cinnamon, salt, and lemon juice. Cook for 8–10 minutes until the apples have softened and the liquid has mostly reduced.⁠

2. Thicken the Filling⁠
In a small bowl, mix the cornflour with water until smooth. Stir it into the apple mixture and cook for another 2 minutes, until thickened. Set aside to cool completely.⁠

3. Cut the Pastry⁠
Cut the pastry sheet into 12 equal rectangles to make 6 pies.⁠

4. Assemble the Pies⁠
Spoon a heaped teaspoon or so of the cooled apple mixture onto 6 of the pastry rectangles.⁠
Brush the edges with egg wash, top with the remaining rectangles, and press the edges with a fork to seal. Cut 2–3 small slits on top of each pie.⁠

5. Sprinkle with Mingle⁠
After cutting the slits, sprinkle MINGLE Jords’ Nan’s Apple Pie Topper over the pies.⁠

6. Bake the Pies⁠
Preheat the oven to 200°C (fan-forced). Place pies on a lined baking tray. Brush the tops with egg wash. Bake for 20 minutes. If needed, reduce the temperature to 180°C and bake a little longer for a crispy, flaky finish.⁠

7. Serve⁠
Let them cool slightly, then dig in. Best served warm, golden and crunchy, straight⁠
from the tray.⁠
