"The Moorings Lakehouse"

The Moorings Lakehouse is a 9 acre permaculture farm with a 200m lake frontage. The property's architecture merges the aesthetics of a classic Australian sheep station with a vintage sailing club. A cathedral like, open gabled roof and over sized swathes of glass reveal the awe inspiring 270 degree peninsula views. The colour pallet for the architecture was inspired by the colours of the jetty wit

h greying timber, white weather boards and flashes of oyster encrusted sandstone. Rolling permaculture vegetable gardens and orchards lead down to the lakefront jetty. Guests are welcome to pick their evening salad from the vegetable garden and fruit from our orchards, you might even find an egg or two in the chicken house. The expanse of Wallis Lake provides a limitless horizon view out to the Pacific Ocean. Bring your own canoe, dangle a line to catch your own dinner or shuck a few oysters off the rocks. Guests with their own boats are welcome to moor up to the jetty and access the wonders of Wallis Lake. The Moorings Lakehouse is located only a 3.5 hr drive north of Sydney and 15 mins drive to several pristine National Park Beaches including: Blueys, Boomerang, Elizabeth, Cellito, Seal Rocks & Treachery. The property is surrounded by the Wallingat, Myall and Booti Booti National Parks which create a wildlife corridor throughout the Great Lakes. Guests may see eagles, pelicans, dolphins, turtles and the famous Wallis lake mullet jumping near the jetty. If you're feeling active there are several wonderful bush walks close by or an expanse of lake front to explore. Permaculture principles have been used in the design of the extensive gardens, orchards and vegetable gardens. The guiding principle being that all elements of the design work in synergy and energy inputs of water and nutrients are retained within the whole system. Of course no toxic pesticides are used on the property and we generate all of our own compost. All water is captured and retained onsite and solar panels used to generate our power.

Nobody is asking for a ballroom any more.
The destination wedding has quietly changed shape. Couples aren’t booking a room with a view. They’re choosing a landscape, a table, a pace, a way of eating. The Italian agriturismo wrote the format decades ago: stay on the land, eat what it grows, let the day take as long as it takes. It has arrived on the lake.
What that looks like in practice:
→ Three days, not one afternoon. A welcome table on Friday, vows on the point on Saturday, a slow brunch on Sunday with nobody sprinting to a flight.
→ Long tables and share platters instead of plated courses and seating charts.
→ Produce with a postcode. W**e poured by whoever’s closest.
→ Canvas, timber and water instead of carpet, ceiling and function room.
→ Guests who don’t attend, they travel. They book the leave, bring the kids, plan the drive. The invitation becomes the trip they’d been waiting for.
A wedding is the loudest thing a couple ever says about how they want to live. Slower, outdoors, closer to the source of the food, present for longer than one night. The venue stopped being a backdrop. It became the message.

Regenerative Travel — replacing sustainability’s “do less harm” with “contribution” to help the land and the guest heal.
For thirty years the responsible-travel conversation has been about subtraction: less water, less waste, less impact. Useful, but it sets the bar at zero. Regenerative travel moves the bar entirely — what is measurably better because you came?
It shows up in unglamorous ways. Land put back: revegetation, waterway repair, soil that holds water and carbon again. Money that stays with local growers, makers and guides. Culture treated as living practice rather than a backdrop. And a guest who participates instead of spectates.
None of this replaces sustainability. Sustainability is the floor — you cannot restore a landscape while wasting the water it depends on. Read it as a progression, not a replacement:
Sustainable → do less harm.
Regenerative → repair, restore, return.
And the part rarely said out loud: what helps the land heal is inseparable from what heals the guest. A day spent with your hands in soil, water and food does something to a person that a spa menu cannot. Restoration runs both ways.
The rarest luxury is no longer access. It is belonging to a place deeply enough to have a stake in what happens next.

Plant something that will outlive you. 🌱🍊

There is a kind of joy that comes from growing an orchard that is almost impossible to explain.

You plant a tree knowing your children will eat from it. And one day, their children might too.

You watch bare stone fruit trees in winter knowing they’ll explode into blossom in spring. You stand beneath orange trees heavy with fruit exactly when your body needs vitamin C. You know the macadamias will come again. You walk into the veggie garden and dinner is growing in the soil.

But the real magic is in the system.

We designed this garden 15 years ago around permaculture principles, with one idea at its heart:

Retain the energy.

Catch the rain instead of letting it leave the property.

Take cow and horse manure from next door and turn it into compost.

Feed the soil so the soil feeds the plants.

Design for sunlight, water, nutrients and seasons.

Create abundance from what is already around you.

And build a system that, once established, gives you far more than it takes from you.

No industrial food chain. No produce travelling thousands of kilometres. No dependency on a food system built around repeated chemical inputs.

Just soil, water, sunlight, compost, seasons and human hands.

And beauty matters.

Because the best system in the world fails if humans don’t want to engage with it.

I think this applies to almost everything we build.

A garden. A school. A business. Even a police force.

Design the system so energy is retained rather than wasted. Make it regenerative rather than extractive. And make it beautiful enough that people actually want to participate in it.

That’s what this orchard has taught me.

Fifteen years after the original design, it keeps flourishing.

It keeps feeding us.

It keeps giving back.

And perhaps the greatest thing you can grow isn’t the food at all.

It’s a living legacy for the people who come after you. 🌿
