Ingredients:
- 1/4 cup Organic Lucuma Powder
- 1/2 cup millet
- 1 cup shredded unsweetened coconut (plus extra for rolling)
- 1 cup coconut milk
- 3 tbsp maple syrup
- 30 almonds

Instructions:
- Soak almonds in hot water for 10 minutes, drain, and peel off the skins.
- Rinse millet under hot running water for a minute.
- Cook millet in coconut milk over low heat until all liquid is absorbed and grains are soft (~20 mins), then let cool completely.
- Blend cooled millet, 1 cup coconut shreds, maple syrup, and Lucuma Powder using an immersion blender until smooth.
- Roll mixture into small balls, tucking one peeled almond into the center of each ball.
- Coat in extra shredded coconut and refrigerate for 1 hour to harden.
