Introducing Méthode Spritz. ☀️

The newest release in our Méthode range, and the furthest we've taken it yet. Riesling, picked early while the acidity's still bright, fermented slowly, then chilled fast to lock in the balance - with just a touch of CO2 added at bottling.

Citrus, green apple, blossom, and 30% less alcohol than our Two Blocks Riesling. Chilled, as an aperitif, or as the base for whatever you're mixing this weekend.

Turns out the judges agreed with us... 🏆

Our 2026 Two Blocks Riesling just took out Best Riesling in Show at the Cowra Wine Show. It's the wine we blend from two vineyards to get right - citrus and acid from Coonawarra, lift from Wrattonbully.

Every year it's the same guessing game - another tie, another mug that ends up in a drawer by October. This year, let's skip it.

Patrick 8 Year Old Single Malt spent eight years resting in a cask that held our Chook Shed Tawny for fifty years before that. Only 300 bottles exist, each one numbered - the kind of gift he'll actually want to open, not just say thanks for.

It started with a week, a still, and a few mates who probably had no business being that close to 300 bottles of whisky. That’s how Patrick 8 Year Old actually came to be.

We aged it eight years in a 50 year old cask that had already spent five decades holding our Chook Shed Tawny - so what came out carries all of that history. Caramelised orange peel, dark honey, butterscotch and fig, with a finish that keeps giving.

Very limited bottles, and every one numbered. This is the release we’re most excited about.

Jenny's been with us since the beginning and is one of the main reasons this place feels like family.

Two decades on, she still lights up the moment someone walks through the door. She loves hearing where they're from, what brought them to Coonawarra, & why they end up staying for one more glass. For Jenny, that is what it is all about.

The Patrick family has always been part of who she is, and it shines through in everything she does. She's incredibly proud to carry Pat's legacy forward, proud of what this place has become, and even prouder of the people she's shared the journey with.

Some things sit quietly for years before they're ready to be appreciated. Introducing our 8 Year Old Single Malt Tasmanian Whisky — matured in a 50 year old tawny cask (yes, the same barrels behind our Chook Shed Tawny). Caramelised orange peel, dark honey, fig and toasted oak, eight years in the making.
