When it’s cold and wet outside, it’s time to start experimenting in the kitchen with my ‘dark dukkah’. Acacia pycnantha, our national floral emblem (the Golden Wattle). I’ve added in toasted black sesame. Pepperberry leaf and Old Man Saltbush. Plus some crushed macadamia nuts.

How exciting! Our Cootamundra wattles are beginning to blossom. A brilliant highlight to an otherwise cold and wet winter day. We're looking forward to roasting the wattle seed when we harvest in December. This species gives a lovely coffee and hazelnut flavour.
