How does every bulb of garlic grown on our farm in Western Australia get its fiery taste ?

A lot of that has to do with how it’s handled right after it’s harvested from our paddocks

Where we grow in WA, garlic needs a few weeks to completely lose its moisture

How long it takes for you will depend on your local conditions and humidity. We get relatively dry & warm October’s which naturally helps garlic dry out

It’s important to store your garlic in a well ventilated storage in dry place

Along with improving taste, drying helps extend the shelf life of our garlic so it stores fresh for our customers for 8-10 months+

In August the garlic on our farm begins the bulbing process which is the final stage of growth 🌱

The dark green stems begin to show signs of dying off and towards the end of the month the outer layer stems will start turning

Bulbs only form during this final stage of growth and can develop quickly in just a matter of weeks

You know your garlic is ready to harvest by monitoring the bulb development.

A rule of thumb is 10 weeks after your garlic first shows signs swelling or “bulbing” but this will depend on your variety and local conditions.

Taking a sample each week from first noticing bulbing is good practice so you don’t miss optimal time to pick garlic

We supplement the healthy growth of our garlic with regular mixes using a fertigation system setup to inject into the irrigation that runs to our paddocks.

This helps us control the levels of nutrients that go into our garlic at different stages of growth.

One of the issues with our soil is it doesn’t retain moisture well. We spread chicken manure into our soil at the beginning of the season to help fix this overtime

Our friend Dave keeps a hive of his bees nearby where we grow garlic on our property. 🐝

He has been keeping bees his whole life and is helping us set up our own hive in a few weeks.

You can find him and his honey at Hamersly farmers market McCormick Honey

The bees help with pollination across our property. Fingers crossed we will be able to enjoy our own honey once the hive establishes across first few months
