Disco in the vineyard?! Not quite....

🦜🌿Viticulturist, Tim, has tied silver flash tape strategically around the vineyard perimeter to deter our resident Twenty-eight Parrots from shredding the young chenin blanc stems.

The tape shimmers and vibrates in the breeze, scattering sunlight and disorientating the birds, who keep away naturally.

🌙✨ On a recent starry night, owner, Wendy Stimpson, donned her spotlighting headlamp to join conservation scientist, Dr Rochelle Steven on a nocturnal biodiversity field survey in the conservation sanctuary here at Passel Estate.

She was overjoyed to spot several critically endangered, western ringtail possums moving gently among the trees - almost certainly descendants of the possums originally rehabilitated on the property through our soft release programme.

It was also a delight to delve into the enchanting world of some of the other nocturnal fauna living in the sanctuary, such as a family of brushtail possums with a young joey rider on his mother's back as she leapt gracefully through the upper tree canopy.

It is a truly profound experience to witness these beautiful creatures thriving peacefully in their natural habitat on the estate. 🍃

We had the honour of The Real Review showcasing our Passel Estate 2023 Sauvignon Blanc in their invitation-only Trade Masterclass as part of their 'Taste the Top W**eries 2026' festival in Sydney.

✨Highly respected w**e critic, Huon Hooke, led the Masterclass, including a tasting of our 2023 Sauvignon Blanc, which he awarded a fabulous 95 Points, declaring it "a stand out".

Passel Estate was "a surprise inclusion" for many of the trade guests who had yet to discover our fine w**es in Sydney.

"Attendees appreciated that this w**e takes the sauvignon blanc grape to another level with skillful barrel and lees work."

🏆Not long afterwards Sydney was surprised once again when this beautiful w**e took home the McCarthy Perpetual TROPHY for Best Sauvignon Blanc at the 2026 Sydney Royal W**e Show!

🍔🍷Cheers to another perfect afternoon at Passel Estate!

Thank you to everyone who attended our Syrah and Venison Barbecue on Saturday. We so enjoy welcoming friends - old and new - to Passel Estate.

It was a beautiful sunny afternoon, as we tucked into Barry's delicious venison burgers fresh from the braai, alongside a glass of our elegant 2022 Syrah, all in the beautiful surrounds of the tasting room overlooking our spring vines.

In celebration of World Animal Day, we reflect on the precious Western Ringtail Possums living in our bushland sanctuary.

“The conservation sanctuary was established before we began producing w**es at the estate, and as a home to Western Ringtail Possums, it inspired the name for our label” ~ says owner, Wendy Stimpson.

Passel Estate’s conservation programme began when Wendy and Barry were asked to provide refuge to a group (passel) of critically endangered Western Ringtail Possums after their habitat was destroyed by devastating local bushfires.

Soft-release enclosures have since been installed to allow the young possums to adjust safely to life in the sanctuary and additional plantings of peppermint tree and other native root stocks each year have helped to enhance the habitat and food source for the possums as well as the other native wildlife that live here on the estate.

We invite you to explore our bushland wildlife sanctuary on a guided Nature and W**e Walk, however, please bear in mind that you’re unlikely to see the possums, as they are nocturnal. A portion of the proceeds from this experience contributes to ongoing conservation projects at Passel Estate.

✨We are super excited to release our new 2025 'La Joie' Méthode Traditionnelle Chenin Blanc THIS WEEKEND to coincide with our BBQ, on Saturday 3rd October!

Fermented in bottle in the traditional French method, with further maturation on lees in bottle before disgorgement and dosage, this is an elegant sparkling w**e with an ultra-fine mousse.

🍐 The 2025 vintage has a bouquet of white pear, nectarine, wet granite and salt-bush.

🍋‍🟩 Soft textures of freshly cut stone fruits underpin a crisp entry of shaved almonds, freshly zested limes and grapefruit pith.

🍦 A creamy and fine mousse from start to finish, dotted by hints of brioche and curd.
