- Smoked Trout mousse with herb emulsion
- Smoked cauliflower, pickled and blistered grapes with fennel seed
- Whipped feta with mustard & cumin dukkha, tomato & orange blossom vinegar

Last week I got to celebrate the end of year (and show off alittle) with my girlfriends.

I created a menu to highlighted all the wonderful skills, flavours and techniques I've learned from all my foodie experiences over the past 12months, of course with a little Simply Food by Gill flare.

So grateful to all my chef friends for teaching me so much and to my girlfriends who had the fun of experiencing it.

Yes it was a little too much fun !! Let the silly season begin 🎅🥂🍾🌲

I was delighted when asked to design a menu, for a private VIP function, with the fabulous Tanya from Dampier Catering Co, such a privilege.

The food was vibrant, full of flavour, and a joy to create, matched perfectly by the excellent service. I don’t usually share photos of the people behind the scenes, yet when both food and hospitality shine this brightly, they deserve to be celebrated.

Tanya and her team made looking after 140 guests feel effortless. A true showcase of passion, professionalism, and excellent food. Grateful for this collaboration and excited for more to come.

Had the fun challenge last night to pair dinner with gin cocktails, I loved it, got to playing with flavour combinations, everything hit high notes except my photos 🤣

It was a step outside my usual repertoire, but with inspiration from the talented Fervor team, I embraced the challenge.
