The name on our flagship red belongs to a man who has always preferred to work quietly behind the scenes.

Within the family, Philip is Vivienne’s husband, Pamela’s father, Patrick’s father-in-law and business partner, and grandfather to four. He is also the quiet presence behind many parts of Singlefile and, quite often, the man keeping the lawns in order.

The 2022 ‘Philip Adrian’ Frankland River Cabernet Sauvignon is the latest vintage of the wine that bears his name. Grown at Riversdale Vineyard on deep gravel over clay, the cabernet reflects the continental cool climate of Frankland River, in the north-west of the Great Southern wine region.

Following a gentle, extended maceration, the wine spent thirteen months in Bordeaux oak and at least thirty months resting in bottle before release, allowing its fruit, oak and tannins to settle into composed balance.

A wine of presence and poise, and a fitting tribute to the man whose contribution to Singlefile is felt in more ways than he might let on.

Porongurup is one of the smallest of the Great Southern’s five subregions, framed by an ancient granite range and a landscape where elevation plays a defining role.

Its terroir is shaped by deep karri loams and granite soils, excellent drainage, cool conditions and the natural rain shadow of the range. Vineyards rise between 200 and 400 metres above sea level, creating conditions that favour riesling with fine aromatics, natural acidity and a distinctive mineral character.

On the north-eastern edge of the Porongurup Range lies the Honan Vineyard, where the fruit for our flagship Singlefile ‘The Pamela’ Porongurup Riesling is grown. At around 300 metres above sea level, the site lends the wine its citrus drive, pronounced minerality and long, precise acidity.

There is much to discover beyond the vineyards, too. Walk through towering karri forest in Porongurup National Park, climb Castle Rock to the Granite Skywalk, or spend an afternoon visiting the small local businesses scattered beneath the granite peaks.

Porongurup is a place best explored slowly, with the landscape offering a deeper understanding of the wines grown here.

Rich, sticky and gently sweet, this slow-roasted chicken by Ottolenghi is made for cold winter evenings around the table. Pomegranate molasses, ginger, prunes and mango chutney create layers of warmth and complexity, while the potatoes soak up the cooking juices as everything slowly comes together in the oven. The bright acidity of our 2025 Great Southern Gamay cuts through the richness and creates a beautifully balanced pairing.

Ingredients
4 chicken Marylands (or use large skin-on thigh cutlets)
500g baby (chat) potatoes, peeled
1.5-2 large onions, peeled and cut into quarters
60g pitted prunes, roughly torn
15g fresh ginger, finely grated
50ml soy sauce
45ml pomegranate molasses
2 teaspoons maple syrup
60g sweet mango chutney
½ teaspoon whole black peppercorns
10g (one bunch) fresh oregano sprigs, plus extra leaves to finish

Method
Preheat the oven to 200°C fan.
Place the chicken, potatoes, onions, prunes, ginger, soy sauce, pomegranate molasses, maple syrup, mango chutney, peppercorns and oregano into a large bowl and toss well to coat.
Transfer everything to a large casserole dish or deep baking tray, cover securely with a lid or foil and roast for 10 minutes.
Reduce the oven temperature to 180°C fan and continue cooking for around one and a half hours, gently turning and stirring the ingredients from time to time so they cook evenly and become coated in the sauce.
Once the chicken is tender and the potatoes are cooked through, remove the foil or lid from the dish to brown for ten minutes. Remove the dish from the oven. Give everything a final stir, cover again and leave to rest for approximately 15 minutes so the flavours can settle.
Finish with fresh oregano leaves and serve alongside a crisp green salad and plenty of bread for the cooking juices.

Terroir begins with the ground beneath the vines.

Across the Great Southern, soils vary considerably from site to site, influencing how vines establish their roots, retain water and access nutrients throughout the growing season. Gravelly soils, for example, tend to drain freely, while differences in soil depth, texture and composition can influence vine vigour and the way fruit develops over the season.

These variations are part of the remarkable diversity of the Great Southern. Across its five subregions, soil works in concert with climate, elevation and aspect to give each vineyard site its own character, ultimately shaping the wines grown there.

Our ‘A Sense of Place’ experience at the Cellar Door explores these differences through the glass, offering a closer look at how the land leaves its imprint on wine.
