Analiese Gregory regularly uses Kunzea and Kunzea flowers in her cooking. It was a natural choice for our special, limited release collaboration. Distilled in gin, Kunzea honey becomes something wilder, one of nature's most distinctive flavours, bottled.

How to drink our x Rare Tasmanian Kunzea Honey Gin? When tasting it neat you can almost see it in cocktails. A Kunzea Honey Gin Martini or Saltbush Collins, enjoyed after dinner with a kunzea sugar and sea salt dusted shortbread, or grilled freshly picked zucchini and asparagus with goat cheese and lemon zest. We’d narrowed down our latest honey gin to one of two distinctly Tasmanian flavours, secretly thinking that leatherwood would be the winner for its creamy texture and floral layers. Upon distillation, though, the results were as clear as they were shocking: kunzea’s flavour was mesmerising, with a coastal earthiness and notes of the sea air. A silky, savoury quality – a dark herbaceousness – that is totally unique and totally Tasmanian.
