O. M. G. This Caramelized Onion Spaghettini with Pangrattato is like my onion soup dreams turned into pasta 🤤🤤🤤 (if you don’t like onions, hrmmmmmm…….)

INGREDIENTS
Onion Sauce
2-3 medium brown onions, sliced finely
3 tbsp olive oil
1 tbsp sugar
1 tsp salt
1/2 cup water
3 tbsp cold Garlic & Sage Butter

Vinaigrette
1 tbsp whole grain mustard
2 tbsp apple cider vinegar (you can use wine vinegar as well, adjust this to taste) 1/4 cup olive oil
1/4 cup green scallions, finely chopped

Pangrattato
1/2 cup panko bread crumbs
2 tbsp Garlic & Sage Butter

METHOD
Onion sauce - In a saucepan add the olive oil and onions. Cook the onions on medium low heat until dark and jammy. This will take about 20-30 minutes. Add the sugar, salt and water. Once this starts boiling, purée the mixture in a heat safe blender until smooth (or use a hand / stick blender). Add the butter, 1 tbsp at a time. Set aside.

Vinaigrette - combine all the ingredients. Set aside.
Pangrattato - In a small fry pan melt the butter on medium low. Brown the bread crumbs. Use a spatula to fold the crumbs through until it is evenly browned. Transfer to a bowl and set aside.

TO ASSEMBLE
Cook 200g spaghettini or any pasta of your choice. Mix the onion sauce into the spaghetti. I would suggest to adjust this according to your desired consistency, 50g of pasta at a time.

Plate up and drizzle with 1-2 tbsp of the mustard vinaigrette and top with the pangrattato. Enjoy!
