Carbonic maceration is a winemaking technique where whole grape clusters are placed in a sealed, carbon dioxide-rich environment, allowing fermentation to begin inside the berries. This anaerobic process triggers enzymatic activity within the grapes, breaking down sugars and producing alcohol without the involvement of yeast at first. It enhances fruitiness, freshness, and floral aromas while reducing bitterness and tannin extraction.
