e embraced in the vineyard and winery, such as hand picking, gentle crushing, hand plunging, and basket pressing through to the use of sustainable building materials. The straw bale warehouse and cellar door are under construction, and their producer wholesaler licence currently limits sales to mail, phone and internet orders. Bob began his winemaking career at Kay Bros, SA while undertaking oenology studies at CSU Wagga Wagga. After returning to NSW, he completed a vintage in the Hunter Valley, and then the family moved to Mudgee where his wife, Julie, was born. They then purchased 50 acres and began planting a small vineyard with a range of grape varieties, including Touriga Nacional, Tinta Cao and Zinfandel. However, since his retirement from teaching, he is following his passion of making his own handcrafted, high quality wines.

Are you a fan of Merlot? So far in the tasting room, some people are surprised our 2023 Merlot is more robust than they expect.
Over the years, Merlot has developed a reputation for being ‘soft’, but grown in the right location and conditions, it produces a rich and complex wine. This one is medium-full bodied with gentle tannins, and aromas of plum, dark cherry and spice.

One thing about wine is people can have preconceived ideas about some varieties. We like to think we challenge this with our wines, and sometimes when customers arrive saying they don’t like a certain variety or style, that’s the one they end up buying!

Last week we celebrated Liam's birthday with some of our latest reds. First up, we had the Heslop 2022 Touriga Nacional Tinta Cão. This wine is made with two Portuguese varieties used traditionally for fortified and table wines. Tinta Cão is a rare variety in Portugal (and Australia). We only have one row of Tinta Cão, so if you’ve visited us in the past, you may not have had the chance to taste it yet.
Occasionally, we make a straight Tinta Cão, but usually we blend it - often with Touriga Nacional. Being both Portuguese, they're similar and complement each other well. In this 2022 vintage, the blend is Touriga Nacional 53% and Tinta Cão 47%. It has aromas of raspberry, cherry, plum and liquorice, medium bodied with silky tannins. We paired it with chicken Marbella, but it would be perfect with red meat as well.

Say hello to our little friends 🐑😍🤍
As part of our regenerate farming approach, we let the sheep graze in the vineyard during winter. It helps control the weeds and fertilises the soil. It also cuts down the amount of diesel we use because we don’t have to do as much slashing with the tractor. Some new arrivals have been extra cute lately!

Liam is doing some blending trials for last year's reds. We like to call him the master of blending because each vintage gives us something a little different, and he takes the time to get each wine just right before.

During vintage we usually ferment each variety separately. After maturing in barrels we're ready to see what works best. Often a single variety is the goal, but sometimes magic happens with a blend. After the final blending, they'll be bottled and spend another 2-3 years maturing before they're ready to drink.
