Happy World Chardonnay Day.
I’m delighted to talk about this wonderful wine.
Chardonnay is a complex white wine that changes so much by climate, how it’s oaked or unoaked or by where it’s grown. Chardonnay will grow almost anywhere and Is often a good yielder.
Commonly grown in France, Australia and California.
In Australia main regions are in Yarra Valley, Margret River, Hunter Valley, Adelaide Hills and Tasmania.
But this little wonder is made in Mudgee NSW by
While visiting family years ago in the area It was my first Mudgee winery I had been too.
It was a delight to see a family run business that practices organic methods of wine making.
That day I found a Chardonnay I truely enjoyed.
Due to a cold climate the wine has a lovely acidic mouthfeel.
A gentle aroma of oak and citrus on the nose.
Flavours of dry white peach and lemon peel on the tongue with a medium body and mineral finish.
Pairing wonderfully with oysters, lemon pepper chicken or creamy vegetable risotto.
A great beginner to trying Chardonnay or for those fresher style Chardonnay drinkers.
Enjoy now or will age well over 6-8 years.
Be sure to like and follow for more cocktail and wine content.
Stay boozy 😋

“Don’t take me for Pomme-Granted”!
I always feel pomegranate is a very underrated ingredient in the cocktail world. So bold, bitter sweet and a little tart. In season right now in Australia so grab will they are around.
Pomegranate pairs wonderfully with citrus flavours, botanicals, fennel, rose, cardamom and so many others.
I needed a smooth dry Gin made with notes of orange blossom, fennel, spruce and spice and thought no better gin other then my friends at plus triple distilled.
Lemon Myrtle is thanks to for their Lemon Myrtle liqueur, a absolute favourite of mine pairing wonderfully with Gin or soda.

Don’t take me for Pomme-Granted:

40ml Freshly juiced pomegranate
45ml Triple G Gin
15ml Baker Williams Lemon Myrtle Liqueur
30ml Lemon juice
1x Dash of Cardamom bitters
1x Dash of rosewater
Top with homemade raspberry & pomegranate soda
Garnish with lemon slice and enjoy

This was a fantastic fusion of flavours for the senses. Floral, fresh, botanical and purple with a velvet texture to boot.
This is “The Butterfly Effect”.
A small action can lead into a big change. What started as a simple hobby grew into something bigger. Tonight we introduce 3 new brands into the channel, meeting the makers of these products has been a real pleasure and to hear their stories and try their products.
Firstly
This beautiful distillery in Botany NSW had a white rum that captured my heart, standing at 43% boasting fresh notes of natural sugar, fairy floss and lighty toasted tropical notes.
I just fell in love with their liqueurs and cellos. The love and care that Domenic and his family place into their products shines through the taste and quality, made in the heart of Smithfield. To see a family working together t**e me back to my old market stall days with my family. The amaretto was a favourite of mine, but the Lychee is what completed the sweetness of this cocktail.
Rowan has a game changer of a egg-white alternative. No smell or altering flavour, giving the cocktail its velvet like texture. Long shelf life and easy clean. Just add 30ml and shake and double stain. Easy as that.

The Butterfly Effect:

45ml Solander White Rum
15m Cello Liqueurs Lychee Liqueur
30ml Vanilla Bean infused Butterfly pea flower tea
30ml Fresh lime juice
30ml Cocktail foamer

Shake vigorously for 15 seconds and double strain, garnish with dehydrated lemon wheel.
You will end up with this flavourful and purple like cocktail. If you are not a fan of rum Solander also do a Gin too.
Stick around for more content and be sure to checkout these amazing accounts.

This cocktail was inspired by Season 2 of Hazbin Hotel which I absolutely adored. So many good songs and such a great story line created by the talented Vivienne Medrano aka Vivziepop.
This cocktail is inspired by the character Rosie. A demon overlord with a early 1900’s fashion style and has the all powerful Radio Demon Alastor under her control as she owns his soul, bound by a deal he made while Alastor was alive.
Rosie holds many secrets and strange powers.
Can’t wait to see more of her in season 3.

Our star ingredient is an Australian Agave spirit made by
A tequila like spirit made on the other side of the world and is triple distilled for perfect smoothness. Pairing well with rosemary and rose water.

Rosie’s Deal:

60ml Agave Spirit
45ml Guava nectar Juice
20ml Grapefruit Juice
10ml Lime juice
15ml Rosemary Sugar syrup
2x Drops Rosewater
1x Dash Smoke & Salt bitters

Shake and strain over ice in a rocks glass, garnish with a rosemary Sprig and enjoy.
This cocktail is hellishly great. Fruitful and balanced boasting herbaceous and floral notes with a mild bitterness yet refreshing. Similar flavours to a Greyhound and Paloma.

Don’t you forget to like and follow.
Let me know if you want to see more Hazbin cocktails.
Stay boozy and don’t go making any deals.

Gotta make the last of my blood orange fix for the year now that the season is over, guess I have to wait till next year.
This concoction was made possible with .gin and
Death Gin’s signature Gin is known for its peppery kick and mild spice notes pairing wonderfully with citrus, botanicals and sweetness. Honestly one of my favourite Victorian Gins.
The second is I love their syrups and they do over 80 flavours of syrups and are my only international brand I do posts for. The blood orange works wonders with Gin, soda water and other mixers.

Orange you glad to see me:

60ml Death Gin
10ml Pomegranate liqueur
15ml Lime juice
15ml Blood orange Juice
10ml Blood orange syrup
1x Dash Fig & Cinnamon bitters
1x Dash Turkish To***co bitters
Wonderfoam

Shake with ice in a shaker and shake for 10 seconds vigorously and double strain into chilled coupe glass and garnish with blood orange slice.
This cocktail is boozy, bitter sweet with a light spice kick to it. Highly recommend this one, stay tuned next time for a Rosemary and guava cocktail and a beer tasting vid.

Happy Halloween!
This cocktail was a good one putting together with the use of lychees and red food dye creating the blood shot lychees as eyeballs
Our first time using Wild Tides Gin in our cocktails. This was a fantastic Gin that was well balanced and paired wonders with their Raspberry liqueur.
Paired nicely along side blood orange syrup and a touch of black absinthe.

45ml Scylla Wild Tides Gin
15ml Scylla Raspberry Liqueur
10ml Blood orange syrup
30ml Lemon juice

There can only be one…
We have done a twist on classic called “The Highlander”. This is our first cocktail using new Whisky. Made and aged in The Southern Highlands NSW this smooth 3 year old whisky boasts notes of chocolate & Orange with a sea salt finish.
I guess that makes this cocktail a “Southern Highlander” gives me a great chance to use my metal 🗡️ pick.
This Whisky works wonders with DOM Benedictine’s botanicals and Fig and cinnamon bitters. A well balanced boozy cocktail with a wonderful journey of flavours for the taste buds.

The Southern Highlander:

75ml Artemis Whisky
15ml DOM Benedictine
2x Dash of Fig & Cinnamon Bitters
1x Smoke & Salt Bitters

Stir over Ice and and double strain into chilled coupe glass and serve with a maraschino cherry.
Enjoy my boozy audience, stay tuned for more cocktails.

As diverse as my taste in wines Is I always seem to gravitate back to Shiraz. It’s a bold beautiful bodied dark grape that also works wonders in a Gin.
Our lovely friends from in Mudgee NSW do an amazing small batch Shiraz Gin.

Deep Ruby red colour with aromas of dark fruit jam and taste of dark berries and spice with a lovely plush dry finish.
Goes great with blood orange soda, tonic or on its own but works wonders in this cocktail.
The distillery maybe small but expect big character and flavours that they produce.

Shiraz Mouth Sour:

50ml Baker Williams Shiraz Gin
10ml Raspberry Liqueur
30ml Lemon Juice
15ml Aquafaba
5ml Blood Orange Syrup
5x Muddled Blueberries
1x Dash of Plum Bitters
1x Dash of Cherry Bitters

Tastes like a delicious sangria and a Gin Sour had a love child 😂🤤
Bold berry and fruitful flavours with a lovely Gin bite and citrus finish.
