First day of winter got is cold. This will light a fire in your stomach and soul.
I love cocktails and I love spicy foods. What better way then together. We had the chilli festival last week. Always a pleasure to see my mates &
We got 3x kinds of chilli here! Chilli & Mango Gin from my friends
This Gin packs a wallop of heat and flavour!
Pairing beautifully with SSB Hot Honey and Chilli Salt. If you are a fan of spice check them out.
I t**e an old favourite classic “The Bee’s Knees” and turned the temperature right up! 🌶️🔥
This will keep away that pesky winter wind.
You heard of a fire bird but how about a Fire Bee!

Fire Bee:

60ml White Oat Distillery Chilli Mango Gin
30ml Fresh Lemon Juice
10ml SSB Hotter Honey
Pinch of SSB Chilli Salt

Shake and double strain into chilled coupe glass rimmed with SSB chilli salt and a habanero chilli 🌶️

Happy World Chardonnay Day.
I’m delighted to talk about this wonderful wine.
Chardonnay is a complex white wine that changes so much by climate, how it’s oaked or unoaked or by where it’s grown. Chardonnay will grow almost anywhere and Is often a good yielder.
Commonly grown in France, Australia and California.
In Australia main regions are in Yarra Valley, Margret River, Hunter Valley, Adelaide Hills and Tasmania.
But this little wonder is made in Mudgee NSW by
While visiting family years ago in the area It was my first Mudgee winery I had been too.
It was a delight to see a family run business that practices organic methods of wine making.
That day I found a Chardonnay I truely enjoyed.
Due to a cold climate the wine has a lovely acidic mouthfeel.
A gentle aroma of oak and citrus on the nose.
Flavours of dry white peach and lemon peel on the tongue with a medium body and mineral finish.
Pairing wonderfully with oysters, lemon pepper chicken or creamy vegetable risotto.
A great beginner to trying Chardonnay or for those fresher style Chardonnay drinkers.
Enjoy now or will age well over 6-8 years.

“Don’t take me for Pomme-Granted”!
I always feel pomegranate is a very underrated ingredient in the cocktail world. So bold, bitter sweet and a little tart. In season right now in Australia so grab will they are around.
Pomegranate pairs wonderfully with citrus flavours, botanicals, fennel, rose, cardamom and so many others.
I needed a smooth dry Gin made with notes of orange blossom, fennel, spruce and spice and thought no better gin other then my friends at plus triple distilled.
Lemon Myrtle is thanks to for their Lemon Myrtle liqueur, a absolute favourite of mine pairing wonderfully with Gin or soda.

Don’t take me for Pomme-Granted:

40ml Freshly juiced pomegranate
45ml Triple G Gin
15ml Baker Williams Lemon Myrtle Liqueur
30ml Lemon juice
1x Dash of Cardamom bitters
1x Dash of rosewater
Top with homemade raspberry & pomegranate soda
Garnish with lemon slice and enjoy

This was a fantastic fusion of flavours for the senses. Floral, fresh, botanical and purple with a velvet texture to boot.
This is “The Butterfly Effect”.
A small action can lead into a big change. What started as a simple hobby grew into something bigger. Tonight we introduce 3 new brands into the channel, meeting the makers of these products has been a real pleasure and to hear their stories and try their products.
Firstly
This beautiful distillery in Botany NSW had a white rum that captured my heart, standing at 43% boasting fresh notes of natural sugar, fairy floss and lighty toasted tropical notes.
I just fell in love with their liqueurs and cellos. The love and care that Domenic and his family place into their products shines through the taste and quality, made in the heart of Smithfield. To see a family working together t**e me back to my old market stall days with my family. The amaretto was a favourite of mine, but the Lychee is what completed the sweetness of this cocktail.
Rowan has a game changer of a egg-white alternative. No smell or altering flavour, giving the cocktail its velvet like texture. Long shelf life and easy clean. Just add 30ml and shake and double stain. Easy as that.

The Butterfly Effect:

45ml Solander White Rum
15m Cello Liqueurs Lychee Liqueur
30ml Vanilla Bean infused Butterfly pea flower tea
30ml Fresh lime juice
30ml Cocktail foamer

Shake vigorously for 15 seconds and double strain, garnish with dehydrated lemon wheel.
You will end up with this flavourful and purple like cocktail. If you are not a fan of rum Solander also do a Gin too.
