Ingredients:
For the Poke Bowl:
1 cup sushi rice, uncooked
1 tbsp rice vinegar
1 tbsp sugar
1/2 tsp salt
200g fresh tuna, cubed
1 tbsp soy sauce
1 tsp sesame oil
1 tsp rice vinegar
1 tsp honey
1/2 avocado, sliced
1/4 cucumber, thinly sliced
1/4 cup edamame beans, cooked
1 tbsp sesame seeds (optional)
Fresh coriander leaves, for garnish
Pickled ginger, for serving (optional)
For the Garnish (optional):
Sriracha mayo or spicy mayo
Nori sheets (cut into strips)
Lime wedges
Method:
1. Rinse the sushi rice under cold water until the water runs clear. Transfer the rice to a saucepan and add 1 ¼ cups of water. Bring it to a boil, cover the saucepan with a lid, and reduce the heat to low. Let it simmer for about 15–20 minutes, or until the rice is tender and all the water is absorbed. Remove from heat and let it sit (still covered) for an additional 10 minutes. Once cooked, gently stir in rice vinegar, sugar, and salt. Let it cool to room temperature.
2. In a medium bowl, mix the tuna cubes with soy sauce, sesame oil, rice vinegar, and honey. Let it marinate for about 10-15 minutes.
3. To assemble, start by placing a scoop of the cooled sushi rice in the centre of each bowl. Arrange the marinated tuna on top of the rice. Add slices of avocado, cucumber, and cooked edamame around the tuna for color and texture. Sprinkle sesame seeds over the bowl, and garnish with fresh coriander leaves. Add a drizzle of sriracha mayo or spicy mayo. Serve with pickled ginger and lime wedges on the side.
