What an incredible few days at Hort Connections 2026 here in Adelaide!

It’s been fantastic to connect, collaborate, and share ideas with so many growers, customers, suppliers, and industry colleagues from across the fresh produce sector.

Cosy up this winter with a bowl of Pumpkin Soup made using Mighty Pumpkins – Butternut Blaze

Ingredients:
• 1 Butternut Pumpkin, peeled and diced
• 1 brown onion, diced
• 2 garlic cloves, crushed
• 3 cups vegetable stock
• 1 cup cooking cream
• 2 tbsp olive oil
• Salt and pepper, to taste
• Fresh herbs or chilli flakes, to garnish

Method:
• Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened and fragrant.

• Add diced pumpkin and stir for 2–3 minutes. Pour in vegetable stock and bring to the boil. Reduce heat and simmer for 20 minutes, or until pumpkin is tender.

• Blend until smooth using a stick blender or food processor. Stir through cream and season with salt and pepper to taste.

• Serve warm with crusty bread and garnish with fresh herbs or chilli flakes.
