Vindaloo has one of the world's best food journeys.

In the 16th century, Portuguese settlers arrived in Goa carrying a simple marinade called vinha d'alhos, made with w**e vinegar and garlic. Goan cooks embraced the recipe, replacing w**e with local palm vinegar and adding chillies and fragrant Indian spices.
