Food Prep - what's your jam?
How do you prepare your family meals for the week?
I like to know my family is nutritionally fuelled and as we grow through different stages of life we are all needing slightly different focuses....
I personally take cooking for my family on with both hands and it gives me great pleasure to know they are fuelling up on hearty meals rather than 'quick' snacks.
Meal preparation also inspires my children to put together meals for their active days and frees me up when they are suddenly hungry!
This also goes for my husband's work schedule which can be fast changing and sporadic and the need to prepare a daily feast within minutes is sometimes a common occurrence.
I do a weekly shop and enjoy preparing meals or meal components over the weekend in preparation for the upcoming week.
I like to prepare trays of roasted carrot, sweet potato and pumpkin which can be used in salads, wraps, nori rolls, sandwiches ect.
SautΓ©ed mushrooms that can be easily heated up with tofu scrambled eggs or added to baked eggplant.
And I prepare a couple of one pot wonders (recipes and n comments below) that can be easily served with rice, baked veggies, mashed potato, salad ect.
This week I focused on using Mother Earth's organic Italian Herb mix and Curry Powder.
