Gooood morning! Happy Sunday!
I feel like I haven’t posted in a long time haha so I thought I’d show you our Sunday breakfast!
I was winging this the entire time lol but here’s how I made it, I used:
* Sweet potato
* Capsicum
* Zucchini
* Red onion
* Apple (yes, apple haha)
* Bacon
* Eggs
* Avocado
* Spinach
* Mozzarella
* Light sour cream
1. Dice sweet potato and toss in a bowl with olive oil, cumin, paprika, garlic powder, onion powder, S&P
2. Pop into the air fryer or oven at 200°c until almost cooked
3. While that’s cooking dice the rest of your veggies and toss in the same bowl with remaining spices (I added extra S&P) & into the air fryer (or oven) with your almost cooked sweet potato
4. While that’s doing it’s thing, I diced some bacon and threw it into a frying pan, I don’t like mine super crispy so it didn’t take long!
5. Once the veggies are cooked add them to the pan with the bacon, add some spinach and sprinkle some mozzarella over
6. Grill in the oven until cheese melts & top with fresh parsley, egg, avocado, chilli (or chilli flakes) and sour cream!
