Wrecking ball doing one of her weekly 200km round trips from our most northern oyster lease to our most southern oyster lease 🫠

This time of year we start moving stock into one of our fattening leases so when we come back into season in August, we always have a few different spots to choose from.

In oyster farming, one lease can hold condition a lot better than another depending on the weather, salinity, food and water conditions — so spreading stock out gives us the best chance of producing top quality oysters .
Roughly 650 baskets getting moved at once.

🦪 Oyster Update

Hi all,

We’ve been a bit quiet lately - so much going on.

Unfortunately, our oyster condition still isn’t where it needs to be for public sales.

As a lot of you know, fuel prices are out of control at the moment — and heading into our biggest few months of fuel use, we’ll be travelling over 100km a day (around 200L a day), 5 days a week, to position our oysters for that perfect winter growth spurt.

Because of this, and the current condition, our season now looks to be finished until around August… so no Easter long weekend oysters 😏

If things improve, I’ll jump straight on here and let everyone know.

Thanks for your patience and ongoing support — quality always comes first for us.

🦪 No oyster sales today

We ended up doing a quick run down to our Wallis Lake farm to dry-pack slats and keep building out the lease.

👉 Plan is to harvest this Monday (23rd).
If I’m happy with the oyster condition, I’ll look at opening the gate most of next week for public oyster sales 🤞

This is a snapshot of our Wallis Lake oyster shed on Oakey Island.
Not quite as modern as our Gold Coast setup, but it’s got plenty of character — and the water access makes working down there easy.

Hi all,

Unfortunately there will be no oyster sales this weekend. The oyster condition is a little inconsistent at the moment and not quite up to the standard we like to offer the public.

It’s a shame our little aphrodisiacs aren’t ready for Valentine’s Day ❤️🦪

On the positive side, we’re using this downtime productively — we’ve been building new slat packs to catch larvae when the oysters spawn, which will help strengthen future stock.

Thanks as always for your understanding and support. We’ll keep you posted on when sales resume.

Hi all,

Unfortunately we had a spawning event in our main selling tank last night and some of the oysters have released their condition, so tomorrow’s oyster sales are cancelled until further notice.

We’re hoping to have everything back up and running by next Saturday if the oyster condition on the farm lifts that little bit more.

We only just finished cleaning the tank last week and brought fresh water in from our North Stradbroke Island lease — so it looks like we’ll be doing it all over again 🫠

For transparency, the issue happened because a circuit breaker tripped overnight which stopped our water pumps. This allowed the water temperature to rise enough for the oysters to think it was party time 💦

Sorry for any inconvenience caused. I’ll be messaging everyone who was planning to collect oysters tomorrow.

The last two weeks have been hectic on the maintenance side — everything decided to either break or need attention at once. I’m a big believer in a proper reset, and that’s exactly what we’ve done.

Earlier this week we attempted to harvest, but Monday’s wind was next level. For the first time in a long while, I made the call to pull out — it simply wasn’t safe and I won’t put my crew at risk. We waited until conditions settled on Wednesday to get back out there.

Our shed stock is currently low as we’ve fully cleaned and sanitised our wet storage tanks. They’ll be refilled tomorrow and we’ll start building volume again.

Because we’re a bit behind the 8-ball this week, we’re locking in ONE main deal and grading the rest of the stock tomorrow.

Hey all!

Unfortunately, we won’t be selling oysters this weekend as we’ve completely emptied both of our wet storage tanks.

We’re also doing a bit of a farm reset. With the full moon last week, some of our oysters spawned slightly while others stayed in absolute top condition — don’t worry, I’m still scratching my head over that one 🧐

As a farmer, my priority is consistency. Every oyster needs to be near perfect and the same quality, every time. This pause gives us the chance to dry out baskets and oysters properly, which helps knock off unwanted spawn, barnacles, and all the other things that love to smother an oyster just by existing. I’m big on keeping my oysters clean — and I also know I can always do better.

Below is a photo of our new shed build — Gold Coast Oysters HQ, 20m x 45m. Many of you have seen her in real life already and she’s a beauty. There are still a few finishes to go, but they’ll have to wait for now.

Hopefully we’ll be refilling the wet storage tanks in a week or two. As soon as I see the oysters hit perfect condition, I’ll strike.
